Sometimes I feel like an old lady. I’m 24 years old yet I hate clubs (they’re just too loud), bars (they’re also too loud and I can’t stand the smell of alcohol), and I don’t like coming home past 7 PM (it gets too dark afterwards!). To top it off, I went to bed at 8:45 PM last night.

I know that it’s so out of the norm to be going to bed so early but in all honesty, I think I like being an “old lady.” I like staying home on a Friday night and whipping up an amazing batch of cookies late into the night, and if I could, I’d sleep at 9 PM everyday!

Anyway, being the non-24 year old that I am, I made these fries again. Yep, double deep-fried french fries – deep fried is the only way to go, right?. But instead of the whole buffalo sauce shebang, I topped them off with a garlicky cheese sauce. It was kind of like the nacho cheese you get at the movie theaters except it’s 100000x better and much more gourmet.

Okay so maybe it’s not exactly like movie theater nacho cheese but it had that thin cheesy texture just blooming with so much garlic flavor. If only movie theaters actually had this kind of cheese sauce…

Garlic Cheese Fries

Perfectly double-fried french fries smothered in a garlic cheese sauce that can be made in 5 minutes!

Ingredients

  • 2 russet potatoes, peeled and cut into 1/3-inch thick fries
  • 1 ½ pints peanut oil
  • Kosher salt, to taste

For the garlic cheese fries

  • 2 ounces cream cheese
  • 2 tablespoons milk
  • 3 cloves garlic, minced
  • 1 teaspoon vegetable oil
  • ¼ teaspoon salt
  • cup shredded sharp cheddar

Instructions

  • In a large bowl with water, soak the potatoes to remove the excess starch, about 30 minutes and up to 24 hours. Drain well and pat dry to remove excess water.
  • Heat peanut oil in a Dutch oven or heavy stock pot to 350 degrees F. Add the potatoes and par cook until light brown, about 4-5 minutes. Transfer to a paper towel-lined plate.
  • Increase oil temperature to 400 degrees F. Add the potatoes again and cook until golden brown and crispy, about 2 minutes. Transfer to a paper towel-lined plate.
  • Melt cream cheese in a small saucepan over medium high heat. Whisk in milk, garlic, oil and salt. Stir in the cheese until smooth. If the sauce is too thick, add more milk as needed.
  • Serve fries immediately, drizzled with cheese sauce.
