I always daydream about how wonderful traveling is but in the end, it is a pain to come home. I have yet to unpack my suitcase from Mixed, do a gazillion loads of laundry and cook something to have some real food around. But in the end, I just don’t have the time. Posting these cookies gets priority over sustenance and nourishment at my house.

No but really, I have to tell you about these cookies.

Have you had Trader Joe’s Candy Cane Joe Joe’s yet? They’re pretty much like Oreos with a pepperminty-type cream filling. And even though I’m not much of a peppermint fan, I absolutely loved these. The peppermint flavor isn’t too strong but just perfect enough to have the minty-ness linger around in the your mouth for just a tiny bit.

So what happens when you combine these Candy Cane Joe Joe’s with some cheesecake cookies?

You get some pretty epic cookies.

The cream cheese provides such a soft base that keeps the cookies so light and fluffy for days, and the pepperminty Oreos in cookie form just throws are fun Christmas party in your mouth.

I do recommend you making these ASAP, not just for yourself but as holiday gifts as well. But if these don’t last in your kitchen, I won’t blame you.

One year ago: Stacked Roasted Vegetable Enchilada

Candy Cane Oreo Cheesecake Cookies

Yields 20 cookies

INGREDIENTS:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 teaspoon peppermint extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 8 Candy Cane Joe Joe’s, crumbled

DIRECTIONS:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter, cream cheese and sugar on medium-high until light and fluffy, about 2-3 minutes. Beat in egg and peppermint extract until well combined. Gradually add flour and baking powder to sugar mixture at low speed, beating just until incorporated. Gently fold in Candy Cane Joe Joe’s.

Drop tablespoons of batter onto prepared baking sheet. Place into oven and bake until edges are golden brown but center is still moist, about 10-12 minutes.

Remove from oven and cool on a wire rack.
