Two crisp buttermilk waffles sandwiching a blueberry compote with melted brie – the perfect grilled cheese for breakfast!
Did you know that April is National Grilled Cheese Month?! We’re coming to a close in April but I just had to share this grilled cheese with you in honor of this glorious, celebratory month. Yes, grilled cheese does in fact call for a celebration.
I’m usually so behind on food holidays (I think I might have skipped over Easter!) but I actually made two different kinds of grilled cheeses for this month’s issue of Wisconsin Cheese’s Grate. Pair. Share. Magazine. This waffle grilled cheese is my absolute favorite of the two, which is why I’m sharing it first! So let’s break down this sandwich.
You have a waffle bread base sandwiching brie and a homemade blueberry compote, which then gets grilled to cheesy, melted ooey-gooey goodness. And you can’t forget about that maple syrup drizzle either. I mean, seriously, is there anything better for breakfast? Although I’d have no problem gobbling this up for dinner with a side of applewood smoked bacon!
A huge thank you to Wisconsin Milk Marketing Board for including me in your magazine. You know I’ll take any opportunity to feast on homemade grilled cheese!
