Candied nuts is one of the best things to snack on. They’re considered brain food, they’re heart healthy and they keep the bad cholesterol away. And when you roast them in cinnamon sugar goodness, they are completely i-r-r-e-s-i-s-t-i-b-l-e.
Not only are these nuts chockfull of healthy benefits but it’s also so unbelievably easy to make! It involves just a 10-minute prep of tossing these babies in cinnamon sugar and then baking them to perfection, which takes about 30 minutes. And with the holidays upon us, these are the perfect budget-friendly homemade food gifts that everyone will love!
Cinnamon Sugar Candied Nuts
Ingredients
- 1 large egg white
- ½ cup sugar
- ¼ cup brown sugar, packed
- 2 teaspoons cinnamon
- 2 cups raw almonds
- 1 cup raw pecans
Instructions
- Preheat oven to 300 degrees F. Line a baking sheet with parchment paper; set aside.
- In a small bowl, whisk together egg white and 1 tablespoon water until frothy, about 2 minutes; set aside.
- In a medium bowl, combine sugars and cinnamon; set aside.
- In a large bowl, combine almonds, pecans and egg white mixture until well combined. Stir in brown sugar mixture until evenly coated.
- Spread almond mixture onto prepared baking sheet in an even layer. Place into oven and bake for 25-30 minutes, stirring at halftime.
- Let cool completely before serving.

Bought dry roasted, unsalted nuts by accident. Can I use them instead of raw? Can’t believe I did that! Erg.

This is my favorite recipe! So easy to make and so delicious. They’re so good, in fact, that my in-law’s determined they’re the only thing I absolutely have to bring to holiday dinners. This will be the 4th year I’m bringing them to Thanksgiving.
Love to make these. Lately I have been substituting the sugars with Swerve brown sugar & Lakanto Monkfruit sweetener, and add 1/2 tsp of cinnamon. Additionally I use 1 tbsp of bourbon instead of water and add 1/4 tsp of vanilla extract. Positively received!

I add a pkg vanilla sugar in the sugar mixture and a teaspoon of vanilla in the egg mixture. Makes them even better. Also a 1/2 teaspoon of salt. Also almonds need more time in oven than pecans so I do them separately.
What a Holiday Treat! I happened to be wrapping up my Christmas cookie baking when this popped up! I had all the ingredients and followed instructions fully (only added cayenne and sea salt after reading other reviews). They came out perfect (25 minutes stirred once after 15 min.) Have a batch in right now that is half sugar half stevia. Will let you all know when it’s done.
Really delish. I did let them go about 10 mins longer at a slightly lower temp. 290 for 40-45 mins. But with the stevia, just plain awesome. I did add some vanilla as that helps in stevia dishes.
Such a find!! I have been using crushed nuts, oats and broken up bran cereal and adoing this layer to dessert bars and any layer thing I bake. Even the bran cereal turned out awesome.
My favorite use so far was in fig bar’s. A pastry/cookie type crust with layer of fig mixture. The candied goodness comes next and topped with crumble top. It was love at first bite!!

i put in about a half stick of melted butter and mix it up thoroughly with the sugar/cinnamon mix. turns out great.
Try mixing these nuts into buttered popcorn. Salty, sweet, delicious.
Since this is the second time I’m making these I thought I’d give the recipe some stars. Easy and delicious! Both batches were great, but I prefer a dash of salt (added to the 2nd batch). It’s sooo hard waiting for them to finish baking once the sweet aroma fills the air.

Super easy and delicious. Made a variety of nuts and packaged them as gifts. Added a little salt to them before baking and it makes them even better. Also discovered almonds need a few extra minutes to toast since they are a bit thicker.

I put these in my smoker and cooked with cherry wood. AMAZING! Sams has 3 lbs of raw almonds for $12. Selling these at the farmers market on Saturday.

My sister brought candied nuts as a treat rot add to dinner munchies after or befor! Unfortunately they are all sticky! We tasted but didn’t eat any. Two things…she didn’t coat them in an egg white nor did she toast them….just discovered they are not raw either….can I do egg white at this stage and then put in oven to toast?

It is best to use light brown sugar. Recipes typically specify when dark brown sugar is required. Hope that helps!
For those that are curious. I used truvia brown sugar blend and truvia scoopable sugar and it is wonderful, maybe just a little too sweet. I followed the recipe exactly but next time I will use less white and more cinnamon. The whole recipe divided by 8 servings is 298 Kcal as calculated by my fitness pal.
Incredibly easy to make, and delicious. Keep finding reasons to nip in to the kitchen to dip into the jar! I also added a little sea salt to the sugar mix. Just off to check something in the kitchen again …
Thanks for this recipe, they’re delicious! I used a mix of coconut sugar and golden caster sugar, plus a mix of almonds, hazelnuts, pecans and cashews. My egg white was pretty large, and I think the mixture could have coated more nuts if I had wanted – as it was, they were just coated decadently. Thinking of making these as little Christmas gifts. I actually have not tried with walnuts – only pecans and almonds!
Walnuts are great for this recipe and usually less expensive than almonds and pecans.
Did you coat them again after baking, with more sugar. The picture rather looks like you have added more, but don’t want to do that if it’s not called for and I don’t see any mention of it in the recipe. Plan to try them soon. Thanks.

I had to tweak this recipe because I burned 2 batches! I always buy jumbo eggs so I used 1 jumbo egg white and omitted the tsp of water when whisking. I increased the brown sugar to 1/2 cup, the cinnamon to 1 tbsp and the pecans to 2 cups. I decreased the oven temp to 250°, baked the nuts for 10 minutes, stirred them, and then baked for another 10 minutes. After removing them from the oven, I stirred the nuts again and let them cool before eating. YUM!
I’m not a huge fan of almonds. Can I change the recipe to only make pecans?

I do this every Christmas as little extras for family. They LOVE them! My recipe is nearly the same except the baking time is about 45-60 minutes. And I wouldn’t exactly call it inexpensive–nuts in bulk aren’t cheap so buy them whenever they’re on sale.
Yes, nuts can get expensive but when I use the word “inexpensive,” I mean that in terms of spending on actual holiday gifts, which does add up!

This recipe tastes almost identical to those nut stands in the mall / theme parks. I was a bit skeptical as I took them out of the oven but once the cooled, they hardened and crunched up and just tasted amazing.
Would it be okay if the nuts weren’t ‘raw’?
If the nuts are not raw (ex. salted and/or roasted), I cannot predict how much the flavors and textures will change. I highly recommend using raw.

I’m not sure whether to kiss you or curse you. Kiss you because these are soooo good I can’t stop eating them; curse you because these are so good I LITERALLY cannot stop eating them. You can try substituting maple syrup but I should tell you that the flavors of the nuts can significantly change with this ingredient.

Yes, definitely line your baking sheet with parchment paper. It’s noted in the first step of the instructions.
I’m wondering if you can make these ahead and then freeze them until needed. I want to make jars of them as gifts to my neighbors but would like to make them a batch at a time. I have back problems that make standing for long times very difficult and it would be nice to be able to make the batches a little at a time and freeze them.
I’m honestly not too sure if this can be frozen as I have never done it myself. These nuts do have a shelf life for about a month in an airtight container.

Thank you, Renee! In response to your crock pot question, it is very difficult to give exact conversion information to translate this recipe to the slow cooker method as I have never done that myself. You can certainly use peanuts but you may have to adjust cooking time as needed.

You can store them in the pantry, refrigerator or freezer. If storing at room temperature, I recommend using an airtight glass or plastic container. Hope that helps, Cheryl.

Kiran, you cannot omit the eggs as there is no binder for the coating to stick. Please find an alternate substitute suitable to your dietary restrictions.
If you lessened the amount of sugar (maybe just replace the white sugar entirely), couldn’t you use honey to make the coating stick?
You can certainly give that a try but that sounds like adding unwanted sweetness and a sticky mess, making these to be a lot more difficult than it should be!
You can make these in a skillet first…. Cup of water cup of sugar, cinnamon and cook till clear/slow boil then add nuts and stir till they are “candied” then you can put in a slow oven for 15-20 min. This is how I make them.
3 cups almonds, 1 cup sugar, 1/2 Tbsp cinnamon, 1/4 cup water, dissolve sugar, cinnamon in non-stick frying pan over medium heat, add almonds, keep stirring til the sugars get grainy, and liquid dries up. Put on parchment or wax paper to cool. No eggs required!

Yes, but less than a cup of these bought at a store will cost you the same. You can buy almost a whole pound of nuts at that price, and make more.
