Ranch Cheddar Chicken
The quickest and easiest baked chicken with an amazingly creamy, cheesy Ranch topping!
Who can ever say no to anything involving Ranch?
Even Butters was fully onboard with the Ranch situation, as he sits here on his coolaroo, waiting to get a piece of it.
And even though the base of the topping involves mayonnaise, which sounds completely bizarre, it actually lends off the most amazing creaminess you’ll ever experience.
Mixed in with sharp cheddar and crisp Panko breadcrumbs, you’ll never have to go back to those boring chicken dinners ever again!
Ranch Cheddar Chicken
Ingredients
- ½ cup mayonnaise
- ½ cup shredded sharp cheddar cheese
- 1 1-ounce package Ranch Seasoning and Salad Dressing Mix
- 3 cloves garlic, minced
- 8 boneless, skinless chicken thighs
- Kosher salt and freshly ground black pepper, to taste
- ⅓ cup Panko*
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat oven to 400 degrees F. Lightly oil a 9x13 baking dish or coat with nonstick spray.
- In a small bowl, whisk together mayonnaise, cheese, Ranch Seasoning and garlic.
- Season chicken thighs with salt and pepper, to taste. Place chicken in a single layer onto the prepared baking dish and top with mayonnaise mixture. Sprinkle with Panko.
- Place into oven and cook until completely cooked through and golden brown on top, reaching an internal temperature of 165 degrees F, about 25-30 minutes.
- Serve immediately, garnished with parsley, if desired.

The chicken was falling apart as I cut it, literally so good. My picky kids loved it too! Make sure to get chicken thighs, not breasts. I almost made this mistake lol also I used regular bread crumbs because I couldn’t find panko. I will definitely be making this again!

I’ve made this recipe several times with great results, it’s a favorite of ours! I have chicken drumsticks in my refrigerator for today, how can I use this recipe? Would I remove the skin, would the coating mixture/panko topping slide off because of the shape of the drumsticks?

Also swapped ranch for french onion dip mix to go better with the mozz. Delicious! Can’t wait to try this with ranch/cheddar.

This is a staple for my family & I! I find myself recommending this recipe at least once a week! The chicken comes out so juicy and SO flavorful. It’s also a meal you don’t have to feel guilty about eating and I love that!
I really hate when people say I loved this. And these are the changes I made. But, I am gluten intolerant. So I made this by doubling the Mayo and leaving out the Panko. It was yummy!
I’m uten intolerant also. There are a couple brands that make gluten free panko crumbs. We use them all the time!
Really really tasty, I used 3 large skinless chicken breasts, which were juicy and perfectly baked to perfection. My only issue was it was quite salty and I normally like salt. I would omit salting the chicken, sinde there is enough salt in the ranch dressing mix. I will be making this again, no doubt about it. I served it with wedge potatoes in the oven on another baking sheet and cooked broccoli with ranch dressing on the side as a sauce, YUMMY!!

As many families are staying in right now and eating out of the freezer & panty, this is a great recipe. I used chicken breasts because that’s what I had & it was delicious! I will watch the salt next time but overall delicious, pretty hands off & very easy.

I’ve made this several times & it is one of my favorite chicken recipes out there! After my first time cooking this particular dish I learned to cut WAAAAAAAY back on the ranch seasoning as it was too salty for mine and my family’s taste. Otherwise I follow the recipe as stated, except for being pretty generous with the amount of topping placed on each piece . I usually serve this with either steamed broccoli or roasted brussel sprouts & a rice side. The topping also goes well on pork chops!

This recipe is AMAAAZINGGG!!! It’s pretty easy to whip up too. It has now become a regular meal for my family. We have it usually once a week. My son and husband beg for it if I go too long without making it! I sprinkle a liiiiitle bit of salt on top of everything when it’s done just to bring out the flavors a little more, but it is seasoned great even without the salt. You should definitely try this!!!
Ok. I’ve never posted a review on Pinterest until now. I tried this recipe for the first time several months ago, and it has become my wifes and I favorite chicken recipe of all time. It’s AMAZING. The taste is just incredible. I would recommend it when you have company coming over. It is so simple to make and is ready In 30 minutes. So my husband isn’t a big ranch fan… so I swapped it out with a dill dip pack instead. HOLY COW. so yummy! Delicious dinner .. made with an herb stuffing and corn.

Made this yesterday. Used 4 skinless, boneless, chicken breasts. Used Italian panko. Added a bit of fresh chopped thyme. My 25 year old airmen grandson, and gramps said it was the best they have ever eaten. That is a compliment!! Thank you.

Have been making this recipe for years, and love it! It’s my boyfriend’s favorite. Tonight I made it and realized I didn’t have enough mayonnaise, so I improvised and used some plain yogurt. Honestly I had low hopes, but it turned out SO GOOD

Miracle Whip is not mayo but it can be substituted for mayo.

This sounds sooooo yummy!!!! I don’t keep ranch seasoning on hand so I just combined some spices- dill, onion and garlic powders, sage, dry mustard & tarragon. I also squeezed a bit of lemon juice in with the mayo. I put everything except the breadcrumbs (“i’m out of panko) in a large ziploc and mixed it all up.
This is DELICIOUS. Such a simple and tasty recipe. I had this with mashed potatoes and gravy, it was wonderful! Your blog is my go-to whenever I start wondering “what’s for dinner?”

Made this exactly as directed (table salt option) and DELICIOUS. I took a risk and served for company last night and it was a huge hit. Delightful creamy texture and the Panko is fantastic – have never used it. It was crispy still tonight when I reheated for leftovers. I think it took 10 extra minutes to cook in my oven. I will definitely be making this again! Thank you for a new staple!

I made this for supper tonight and it was so good! My husband usually does not like mayo but I made it with light mayo anyway and he never knew I used it. (I have subbed Greek yogurt for mayo before and it works great, but I thought the combo in the recipe sounded really good). I was disappointed because my package of chicken thighs only had 6 instead of 8 thighs but I used the same amount of other ingredients and it still worked out well. I had rice and corn on the cob with it and it was really good with the sides too. My husband and son polished off 5 chicken thighs between the two of them. I was lucky I was able to get one piece!
Family loved this recipe first time I made it. Unfortunately the second time I went to make it my chicken thighs had gone bad and of course I had already started mixing everything for this recipe. Luckily I am the worlds worst at following a recipe and almost always turn them into my own. If you don’t have chicken use pork. I had a pork roast thawing in the frig. I cut up this time, but thinking next time I’m going to use bone-in pork chops!!!! Yum!!!! 2 thumbs up from my family!!!!

i made this tonight it was awesome! pretty salty though….. i wont put salt on the chicken next time its salty enough with the ranch dip mix. i just used ground up pep farm stuffing in place of “panko” it was good thanks!
I tried this for the first time about a month ago. It was a big hit. Probably the best chicken recipe I’ve made. The only drawback was that the bottom of the chicken was soggy. It must have been the fat from the chicken gathering in the bottom of the casserole dish(I didn’t see much though). I made it again and put a layer of sliced onions under the chicken. Still great but surprisingly it was still soggy. I’m making it again tonight and trying to be smarter. I’ve got it on a roasting rack in a baking pan. This way there is no chance of the chicken resting in the juices. Wish me luck. Hopefully the third time is a charm for this guy
I made this tonight.. Except we are cooking low carb and instead of Panko I crushed pork rinds up and sprinkled on top. Also, I baked it on a cookie sheet with a Silpat. It was very good… thanks!!

Nope – the chicken is not seared at all – I simply used a pan for photographic purposes. 🙂

I’ve made this recipe so many times! Everyone in my house loves it, including my niece and nephew who are only 5, and usually very pickey eaters.

This chicken is fabulous, my family loved it! Very easy to prepare and impossible to screw up. One of the things I love best about chicken thighs! The first time I made this I followed the recipe exactly. I think it would be fun to experiment with different kinds of ranch mixes….fiesta ranch, harvest dill, or maybe even an Italian dressing mix. I didn’t have any ranch mix on hand so I found a homemade recipe on Pinterest and used what I hand in the cabinet. Also, no panko only bread crumbs. Turned out great! We avoid processed foods and spice mixes from corporate as much as humanly possible. Do you think your recipe for the ranch seasoning mix from your Easy Ranch Baby Carrots work with the chicken?
Brenna, unfortunately, I don’t think the ranch seasoning mix from the baby carrots would work here. The addition of dry buttermilk (which is not in my recipe) is crucial to the seasoning for the chicken here.

Sarah, it is best to use the Ranch Seasoning and Salad Dressing Mix. Using a substitution may also result in a mediocre outcome.
Great recipe! I’ve made this twice and each time the toppings would melt off in the oven. The chicken would just be cooking in a puddle of mayo/ranch/cheddar/panko and I would have to scoop the mayo mix back onto the chicken once it is out of the oven =(

Miracle Whip should work just fine, but it is really best to use “real mayonnaise”.

I’m personally not a fan of Ritz cracker crumbs on a savory chicken dish like this but the decision is really up to you!
Got regular crackers too if you think it would be better.
For a recipe like this, it’s really best to use Panko to obtain the best results possible. But again, these recipes here are a base and can be adjusted with what you have on hand. That being said, substitutions should really be made at your own risk.

Came up with something similar years ago clearing cupboards – added Italian dressing mix to low- (non-?) fat mayo hubby refused to eat, dunked chicken pieces, rolled in crushed stale cornflakes & baked. Good stuff! Always meant to try it again with yogurt…

As there is no addition of salt in the recipe, the Ranch Seasoning and Salad Dressing Mix may be too salty for your taste preferences. It may be best to make the ranch seasoning from scratch so that you have complete control of the salt content.

It’s actually a seasoning packet that can be used for many recipes. But if this is not available in your area, it may be best that you make it from scratch. You can find many DIY ranch seasoning recipes available online such as Pinterest.
U don’t have Panko bread crumbs available. Would normal bread crumbs suffice or would you suggest I skip the bread crumbs all together?
Regular breadcrumbs will work just fine.

Unfortunately, I am not the best person to ask as I do not have much experience cooking with duck. I think I cooked it once or twice years ago, and as much as I would love to cook with it, it can get so expensive!

What a great recipe! I made a rookie mistake and halved the recipe without halving the ranch dip mix 🙁 but it was still excellent! The topping gets super crispy and just melts in your mouth! Due to my error and the subsequent saltiness of my finished chicken, it couldn’t really be eaten on its own. However, I hand-pulled the chicken and made a cheddar ranch chicken pasta bake out of it, which turned out fantastic. Looking forward to trying this again, and using the right amounts of everything this time! 🙂
Big hit with the family this weekend. I did run mine under the broiler at the end for a few seconds to make it extra crispy. Am assuming you could also make with boneless, skinless chicken breasts, but the thighs are so super tender. Great recipe!

Ilove this recipe! I did make one minor mistake however, I mixed the Panko in with the mayo etc. rather sprinkling on top. Still turned out delicious. I’ll read the recipe more carefully next time!

This sounds incredible but my husband really dislikes mayo. How could I substitute?
Unfortunately I cannot suggest an appropriate substitute without further recipe testing. It is always best to use the ingredients listed in the recipe to obtain the best results possible.
He would never know it had mayo in it.
I too have a mayonnaise aversion! I have made recipes very similar to this using full-fat sour cream instead of mayo, and it worked just fine!
Just saw this as I was scrolling through. My family loves this recipe and it has become a great go-to weeknight meal. I’ve never used mayo with mine, I substitute fat free Greek yogurt. It comes out very moist and creamy, and has a very mild tang to it from the freshness of the yogurt. I think this saves even more calories and fat, as well.
I have used Greek yogurt before. It was good just more tangy. My daughters prefer the mayo version.
My husband hates mayonnaise too! Can’t stand the smell or even the sight of it. I made something very similar to this and didn’t tell him it was in it. We were fighting over the last piece of it! Lol 😛
I have found that plain Greek yogurt works well for a mayonnaise substitute. Just in case anyone is still interested. My husband hates mayo as well.

I made skinless it so easy to skin a thigh, I left the bone in. I followed the recipe ingredients exactly, needed to make just a bit more topping to cover the 8 thighs completely. We live in the Rocky Mountains at high altitude, so I baked ours in a slower oven 375 for one hour.

Made it this afternoon. The kids loved it. I skipped the salt altogether since these ranch mixes always have a fair bit of it.
Also, I used thighs with skin and bones (that’s all I had in the house) and I had to leave it in the oven for about 10-15 minutes longer. But turned out really well. Will definitely make again.
