Tuscan Tortellini Soup
Tuscan Tortellini Soup
Ingredients
- 1 tablespoon olive oil
- 1 pound spicy Italian sausage, casing removed
- 3 cloves garlic, minced
- 1 onion, diced
- 2 cups chicken stock
- 1 28-ounce can crushed tomatoes
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes
- Kosher salt and freshly ground black pepper, to taste
- 1 9-ounce package refrigerated three cheese tortellini
- ⅓ cup heavy cream
- ¼ cup freshly grated Parmesan
- 1 cup croutons
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium heat. Add Italian sausage to the skillet and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. Stir in garlic and onion. Cook, stirring occasionally, until tender, about 3-4 minutes.
- Whisk in chicken stock, crushed tomatoes, basil, oregano, red pepper flakes and 1 cup water; season with salt and pepper, to taste. Bring to a boil and stir in tortellini; reduce heat and simmer until tortellini is cooked through, about 5-6 minutes.
- Stir in heavy cream and Parmesan until well combined and heated through, about 2-3 minutes.
- Serve immediately, garnished with croutons, if desired.

I am so happy that I stumbled across your website! This recipe is my boyfriend’s new favorite meal. I only use about half of an onion and a little less than 1/4 cup of parm cheese. I did find a great red pepper italian chicken sausage that gives the soup a nice kick!
Made this soup tonight for the first time with several minor changes (regular not spicy sausage, no red pepper flakes) – delicious! Hubby says recipe is a keeper and I agree. Leftovers for lunch at work tomorrow 🙂

This recipe was so delicious but mine sure didn’t look like the photo. I had almost no liquid in the soup. Any suggestions? Possibly doubling the tomatoes?
You can add more chicken stock as needed.
Made this last night and it was delicious – “restaurant quality” as I like to say at the dinner table. I made this recipe and it was very delicious. But the next day the leftovers were very concentrate and had a very strong cheese flavor. I think I will make this recipe again but maybe put less grated parmesan or leave it out since the tortellini has cheese and the heavy cream thickens it. But still it tasted amazing! I loved it! I’ve made this dish twice since I found this recipe. On my second I added 3/4 cup of a bold red wine. Then when allowing all the ingredients to bled, I added creamy Havarti to the mixture and it WOWED my guests…even my husband! You can certainly try substituting soy chorizo but without further recipe testing, I cannot speak for how much this will change the overall taste/texture of the dish. It is always best to use the ingredients listed in the recipe to obtain the best results possible.

I love this recipe but how would it be without the cream? I love your recipes but as some one who has to be extremely careful about dairy products, I often have to modify them. The cheese in the tortellini is kind of pushing the amount my current dairy limits.
You can omit the cream if you absolutely have to but it probably will not taste as good as adding it in!
This was delish! I made it last night and it was a hit. Had leftovers today which tasted great as well…more of a very creamy pasta dish than a soup.. but equally tasty! Thanks for the wonderful recipe!

I’ve never tried it myself but I don’t see why it wouldn’t work. Although you may have to adjust cooking time as needed to ensure that the tortellini is completeley cooked through.

When I cook Italian sausage I find that it generally has enough fat on its own so you may be able to skip the olive oil step and then draining the excess fat, but I do recommend starting off lower on the heat to give it a chance to render it’s own fat out. Love your recipes and hope to get a chance at the sweepstakes as well! : )
