Baked Cream Cheese Spaghetti
A baked spaghetti casserole that’s amazingly cheesy and creamy. It’s comfort food at its best, and EASIEST!
I know. It’s the day after Labor Day, we’re just about to start football season, and I post this instead of some sort of post-Labor-Day-juice-cleanse-quinoa-health-kick type recipe.
Sorry guys, but you’ll need your stretchy pants for this.
It’s pure comfort food at its best – so no. It is not diet-friendly. It is not skinny. It is not light. It’s just the best kind of spaghetti.
It’s a spaghetti casserole with layers of pasta noodles, cream cheese and sour cream, and a meaty-marinara sauce, baked to cheesy perfection.
It’s enough to feed a crowd or feed a party of two all week long. You win either way.
Baked Cream Cheese Spaghetti
Ingredients
- 1 pound spaghetti
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- Kosher salt and freshly ground black pepper
- 1 28-ounce can crushed tomatoes
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon crushed red pepper flakes, optional
- ½ cup whipped cream cheese
- ½ cup sour cream
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat oven to 350 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray.
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Heat olive oil in a large skillet over medium high heat. Add ground beef and onion and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat.
- Stir in crushed tomatoes, basil, oregano, parsley and red pepper flakes; season with salt and pepper, to taste.
- In a small bowl, whisk together cream cheese and sour cream.
- Add pasta to the prepared baking dish and layer with cream cheese and beef mixture; sprinkle with cheeses.
- Place into oven and bake until bubbly and heated through, about 15-20 minutes.
- Serve immediately, garnished with parsley, if desired.

Can u use diced tomatoes? I went to the store and grabbed diced instead of crushed.
This looks delicious. Quick question…can you taste the cream cheese/sour cream mixture once it’s cooked? My husband doesn’t like either one of those, but I have made recipes with them before, separately. They’re mixed in, so he can’t taste it and I’m curious to know if you can tell or not. Thank you.

Delicious!! It has become a regular meal at my house! The only change I make is I add a little bit of tomato sauce to it, otherwise it can get a little dry.

This was delicious! We used jarred spaghetti sauce, and beyond meat. There was plenty of cheese and the flavors combined well.
This was really good! I was looking for something “different” to make with a lb of ground beef – and this was it! I added a can of mushrooms to the beef/tomato/onion mixture, and I think it turned out really well!! I didn’t have the cheeses separately, but I had a bag of the “Mexican Style” shredded cheese and it fit the bill! I think I used a bit more than a half cup of the cream cheese & sour cream, but I wanted it to cover the entire dish. All in all, this is a very tasty, filling dish and you can swap out different ingredients according to what you have in your pantry! No crushed tomatoes?? Use a can of Rotel! This recipe is definitely going into my meal rotation!!!

Great recipe, but I switched it up just a bit because I absolutely LOVE Rao’s marinara and Barilla cut spaghetti.

I was expecting more of a casserole. I thought about mixing the cream cheese in with the spaghetti per other comments, but stuck to the recipe and just layered it. It was basically cheesy spaghetti. I would not classify this as a casserole at all. It was good, but probably not something I’ll make again.

Hello, I’ve made this before and it’s amazing! Just a quick question- I’m making it for a pot luck tomorrow and I’m just wondering if I should still bake it since I have to reheat it tomorrow? Or should I bake it for less time that way the cheese doesn’t turn brown when I reheat it the following day.
I made this yesterday and it is fabulous. I used an Italian blend of cheese and added some garlic to the sauce. It makes a lot. I might try cutting it in half the next time as it is only me in the house.
This was very tasty! Great to have a variation on a regular spaghetti dinner. I doubled the cream cheese and cheeses, mixed the cream cheese and sour cream into the noodles, split everything in half and layered the layers twice (noodles on bottom, then meat sauce, then cheese, repeat.)I also added some fresh garlic to hamburger while browning it with the onion and added garlic powder with the tomatoes. I made this with some homemade spaghetti sauce I had in the freezer (which included 1/2 lb ground beef and 1/2 lb mild Italian gound sausage) . It was absolutely delicious! I used 1-1/2 times the cream cheese and sour cream. Also, I didn’t have whipped cream cheese, so I heated 3/4 block regular cream cheese in the microwave for a few seconds before mixing with sour cream. I also added a little garlic salt to the creams. I would recommend layering in the same order listed in the recipe as it’s easier to spread the creams evenly across the noodles before putting on the red sauce. I think if you tried spreading the cream over the red sauce, it would end up mixed together.

I made this earlier this week. It’s very tasty. But…way too much pasta for the recipe. I also had to double the cream cheese/sour cream part. I think if you cut the pasta to 1/2 pound, this would be better.
I’ve made spaghetti quite a few times but, it was always the usual meat sauce spaghetti. Family would eat it but, wouldn’t go for seconds . I tried this recipe a few weeks ago and it was a hit.

Love this idea. Made it with the following changes..made more of the creamy mixture with one brick of cream cheese and 3/4 cup if Sour cream. I did end up mixing the creamy mixture with the noodles to ensure I wouldn’t have any noodles unsauced . Added Garlic and instead of the individual seasonings I used Italian Spice blend. To the meat mixture I added cubed zucchini and frozen mixed greens (kale,spinach, chard chopped pieces). I also added some jarred Tomato sauce with the tomatoes. Love love love this! Can you use pasta sauce unstead of crushed tomatoes? My son is not a fan of tomatoes. I’m thinking I would split the layers, half the spaghetti noodles then half the cream cheese & sauce mixes, repeat. NOTE: I always add a wee little cinnamon and a dash of sugar to the pasta sauce. Sounds strange but it’s really quite good. I’m Greek, it’s something we do.

I ended up using Classico Traditional Sweet Basil added my cinnamon and sugar. I mixed a couple spoons full of the sauce on the spaghetti and margarine just to give the spaghetti a little umphf. Then followed the recipe. Turned out great.
If you do not like a lot of herbs, do not use them, especially oregano. I would use garlic, Instead

Chungah, while I hate to knock one of your recipes, we found this one subpar to another one I have that places half of the spaghetti in the pan, then layers cheese, sauce and noodles again- topping with sauce and shredded mozzarella.We felt like this left the noodles plain and didn’t meld the flavor into the noodles much. Sorry, .
Keep working those recipes though, we like a lot of the others you churn out.

I halved this recipe, and still ended up with 9 servings. I used an 8×8 and baked it a little longer than the recommended time. It was sooo good. I recently went through a surgery that made it so I couldn’t eat, and this was the first recipe I made when I could eat normally again. Very easy to make, and very flavorful. I added a little extra crushed red pepper, just because we like it spicy. I was told “this is a keeper recipe” after dinner. Thanks so much for this! Very, very good. Will make again.

When do you use the whipping cream in the cream cheese spaghetti?
There is no whipped cream in the ingredient list, but whipped cream cheese – it gets used starting in step 5. Hope that helps!
I love this recipe!!!! I have three boys and honest to goodness they have three plates each when I make this dish. I mix the sour cream and cream cheese mixture in with the noodles and then start the meat and cheese layering. It gives the noodles a little more spazazz to me! It also blends really nicely in the warm noodles.

Thanks for this recipe. I made it tonight and it was very good. I thought it would be heavy with the creams but it wasn’t at all. I think it was the amount; only a cup was perfect for a large dish. I also accidentally added a 54 oz can of crushed tomatoes. I cooked the tomato beef mixture down a bit but it was about perfect. The creams add a nice little something extra. Thanks again. This was great! I used half the spaghetti since I’m only cooking for two, there’s definitely enough for tomorrow’s dinner still. In the picture it shows everything layered in the dutch oven instead of 9×13. Would it work as well if everything was mixed in the dutch oven, layered with cheese and baked in the dutch oven? Thanks!

I made this tonight and it was really good! The only issue I had was one pound of spaghetti seemed like too much once I cooked it and placed it in the baking dish. I ended up using less. Do you have whole peeled plum tomatoes? You can crush those yourself!

I have NEVER posted on a recipe before. But this recipe compelled me! 100% transparency, I’m a full time career woman/full time single mom so I have to find shortcuts and money saving options. So, in place of the tomatoes (which my son would NOT have gone for) and the seasonings I added a jar of his favorite spaghetti sauce. He and his friends (13 year olds) devoured this. I mixed it all up so they couldn’t really see the cream cheese/sour cream layers (because someone didn’t like cream cheese, some else wouldn’t eat sour cream, etc). This is seriously so good and so easy. I’m making this again soon! It’s so much better than just the normal spaghetti night. Just a few more steps!

This one’s a keeper…and you likely have all or most of the ingredients on hand, so a great meal for a busy weeknight. I had to adjust since I didn’t want to run to the store; doubled up on cream cheese since I was out of sour cream, added some Parmesan (was out of cheddar), fresh garlic, a little red wine. Ate waaaaayyyy to much for dinner!

I modified this recipe to lower the calories and fat. I used ground turkey,low fat cheeses,low sodium sauces.
It came tasting Great. I also used whole wheat spaghetti.

This is great!! Added 1/3 cup of Ricotta cheese also and some sugar to lower the acid of the tomatoes. This recipe really works.

I made this recently I have got to say– FIVE STARS! This recipe is delicious! Creamy, cheesey, all that you would want from a baked spaghetti! I was not disappointed and will definitely be making this again!
Have you ever eaten this without the beef? I try to eat meatless meals as often as possible and while I know it’s possible to make it without the meat I question if it would still be delicious without it!

We made this, and I would say it needs more sauce and seasonings. I would also say to mix the pasta with the cheese mixture and sauce first and then top with the cheese.
I would agree. I just made it and we enjoyed it. I added a bit if sugar because the sauce was just too hard. The tomatoes had too much of a bite. That was the only change I made, but next time I will mix the layers. I think it will better marry the flavors. Also, I saw earlier that I can double the cream cheese, so I’ll probably do that next time.
I was very indifferent with this recipe. My kids hated it. The concept is good, but the sauce recipe is barely palatable. I’ll probably try this again with a different sauce recipe or with jarred sauce (it would be much better).
I’m sorry that this recipe did not turn out the way you had imagined. I only post recipes that have been successfully tested in my own kitchen, and as you can see from the comments here, many of these readers have had great outcomes in the final dish as well.
So I must ask – did you follow the recipe exactly as written without any substitutions? I am honestly a bit confused as to how the sauce was “barely palatable” – it’s homemade tomato sauce using crushed tomatoes with pantry herbs. You just can’t go wrong with those ingredients!
I apologize, I just saw the reply. I followed the recipe to a “T”. The oregano flavor was extremely overpowering. Again, I think the concept is good…but the sauce didn’t go over well in my household. My kids took one bite and asked if they could have a sandwich instead. I ate it, but I couldn’t decide if I actually liked it. I will try it again, but with a different sauce recipe (or even a jarred sauce).

Standard cream cheese will work just fine.
I’ve made this recipe twice. The second time I used the ground Italian sausage in lieu of the ground beef, and it was much better — not that it wasn’t good before! This recipe is definitely part of our dinner rotation now.

The tomato sauce really is a key ingredient here so I do not recommend any type of substitutions. That being said, I just don’t think this recipe is for him. But please feel free to browse through the recipe index for more recipe inspiration that may suit his taste preferences.
Maybe substitute alfredo sauce.
Try cream of mushroom soup diluted with low sodium chicken stock/broth if necessary. Could dilute soup with vegetable stock or water as well.

Yes you can. I have a similar recipe and it heats up well … just layer it then refrigerate it until the next day. Take it out about a half hour before putting it in the oven.
When you say a pound of spaghetti do you mean cooked spaghetti or dried? If you mean cooked spaghetti what is the dry equivalent?

Looks great. I have a ziti recipe that I’ve used for years that is a lot like this. Alternate layers of sour cream, ricotta, mozzarella cheese and cream cheese. etc etc. This looks amazing – I’m omitting the ground beef because I’m vegetarian and using my tomato sauce made in the crockpot (from my garden tomatoes). I boil pasta in my rice cooker because its only me now and I chunked all of my pots and pans except for 2 cast irons. I will freeze leftovers or this. thank you!!

Do you think I could substitute spaghetti squash for the pasta?
That sounds like a great substitute but without having tried this myself, I cannot really say with certainty. Please use your best judgment.

I used spaghetti squash in this recipe and it was delicious! I used half of a roasted 5 pound spaghetti squash, and I mixed the cream cheese (about twice what the recipe called for), sour cream, and some Parmesan cheese with the squash for the bottom layer.
It looks good! I have someone in the house that cannot tolerate sour cream. Can you recommend a substitution? Or just double the cream cheese? This looks so good and I need to make this. Now.
Yes, you can absolutely double the cream cheese.

whole milk and lemon juice
You can also blend cottage cheese till smooth and use it as sour cream.
or plain yogurt works well in place of sour cream with a lot less calories
