Easy Fruit Salad with Orange Poppy Seed Dressing
Simply the best and easiest fruit salad! You can use fruits in season but the BEST part is the dressing!
This salad is my favorite part of summer.
Sure, the poolside-mojito dates are fun too, but really, this salad takes the cake.
And it serves many purposes.
- It’s a healthy spin to dessert time, just in time for bikini season. So you can put down the chocolate cake. And the box of donuts.
- You can use up all those lingering fruits in your fridge.
- There’s just so many colors here, simply making this summertime magic.
- But really. That poppy seed dressing. That’s the only reason why you should be making this. The ONLY reason.
- 4 cups strawberries, hulled and halved
- 2 cups blackberries
- 1 cup blueberries
- 4 mandarin oranges, peeled and segmented
- 3 kiwi fruit, peeled and sliced
- ¼ cup fresh mint leaves, torn
For the dressing
- ¼ cup freshly squeezed orange juice
- Zest of 1 orange
- 1 tablespoon honey, or more, to taste
- ½ teaspoon poppy seeds
- Pinch of nutmeg
In a small bowl, whisk together orange juice, orange zest, honey, poppy seeds and nutmeg; set aside.
In a large bowl, combine strawberries, blackberries, blueberries, oranges and kiwi. Stir in orange juice mixture and gently toss to combine.
Let sit at least 15 minutes before serving, garnished with mint, if desired.*
*This can be covered and refrigerated for up to 4 hours.
