Kale Cobb Salad
A colorful, hearty and power-packed salad with the creamiest poppy seed dressing, loaded with berries, feta, avocado and almond!
This epic cobb salad.

Kale Cobb Salad
Ingredients
- 6 cups chopped kale
- 2 avocados, halved, peeled, seeded and diced
- 2 cup strawberries, halved
- ½ cup Fisher Nuts Whole Natural Almonds
- ½ cup blackberries
- â…“ cup blueberries
- â…“ cup crumbled feta cheese
For the poppy seed dressing
- â…“ cup mayonnaise
- ¼ cup milk
- 2 tablespoons sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon poppy seeds
Instructions
- To make the poppy seed dressing, whisk together mayonnaise, milk, sugar, apple cider vinegar and poppy seeds in a small bowl; set aside.
- To assemble the salad, place kale in a large bowl; top with arranged rows of avocados, strawberries, almonds, blackberries, blueberries and feta.
- Serve immediately with poppy seed dressing.

Thanks for the giveaway! For entertaining, just last night I made taco seasoned turkey, then filled stand and stuff hard shells and rolled-up flour tortillas with the meat and cheese. Then I baked them in the oven for 10-12 minutes and had toppings and tortilla chips. Toppings were guacamole, salsa ranch dressing, salsa, sour cream, chopped greens, tomatoes. Easy to prep and everyone customized their tacos.

In the summer we keep things real simple. We like to use throwaway plates, cups and bowls but still use real eating utensils. Your salad looks so yummy!

I love freezing berries or mint in ice cubes, because apart from keeping your drinks cool, they look so nice and impart a little extra flavor to your summer beverages.

I enjoy entertaining anytime I can. I love to have barbecues in the summer. It’s a casual way to entertain & I think people are more relaxed when they are comfortable. In order to make entertains more affordable for everyone I allow the guests to bring something if they would like. Â
I like having a few people over and entertaining on the back porch. Lots of fruit, light salads, drinks, popsicles for the kids.
This salad looks amazing. I make something very similar, but use romaine and spinach. Love kale, I’ll be making this recipe asap. As for entertaining this summer, we love getting together with friends and making easy, make-ahead recipes using lots of veggies from our garden – salads, corn dips, homemade pickles, relishes, salsas, tomato sandwiches.

I plan on incorporating lots of blackberries into everything I make this summer – from blackberry syrup for blackberry ice cream sodas to blackberry crisp. They’re free for the picking where I live, and they’re oh so delicious!
My favorite Summer entertaining idea is something my Mother taught me to do. Â She used to make Hobo packets for my brother and I when we were growing up and now I make them for my family.
During the summer we love to bbq and go to the beach. Your salad would be perfect for both!

I don’t have entertaining ideas, but we do go outside a lot more since we live in the PNW and it is not raining as much in the summer!
Well, we live in Texas, so we are always using the grill to keep the kitchen cool! My husband is a master at the grill and at the smoker, too! And I usually make chile con queso in the crockpot to snack on. Happy Summer, y’all!
I read Kale and started to automatically delete, but then I saw the variety of toppings, all that I like, and read the dressing recipe. Okay you convinced me, I’m giving kale another try, but only with this salad. Could be the start of something healthy!
Salads are great summer feasts–leftover grilled everything, corn shucked off the cob–it’s all good and NEW in a salad.

Utilizing the grill makes for great entertaining! I love to grill chicken that has marinated in Italian dressing. Serve with grilled corn on the cob and a great salad- like this amazing kale cobb salad! And for dessert…home made Popsicles! I especially love sangria pops for the adult version 😉

We just had a HUGE 4th of July bash – a catfish fry with all sorts of yummy cold side dishes. We used an inflatable baby pool full of ice to keep the food cold. 😀

Our neighborhood summer get togethers are legendary and occur regularly during the summer. We usually grill in order to make the most of our gathering time and not spend all our energy on the food, but the women make the most delectable side dishes in advance so we can spend our time relaxing and chatting rather than cooking!

I freeze juice or lemonade into ice cubes and use them in drinks so the drinks stay cold but don’t get watered down.

I like having a cookie buffet. I make the dough ahead of time and divide it into hunks. Various toppings are chopped and added to small bowls. Each person get to make up their own creation prior to dinner. While we eat I bake the cookies and serve them with a tall glass of cold milk!
Been doing a lot of traveling this summer, so haven’t entertained yet. Â Glad to be home and looking forward to some BBQ’s.

As for my favorite way to entertain, I like making it easy on the guests. I put out food and beverages throughout the rooms instead of just one area. It gives more room to roam and gives a nice laid back atmosphere.
For summer entertaining I love using fresh fruits for drinks!
If you are serving punch make and ice ring out of the punch to keep it cold and not water down the drink.

I love to entertain in the summer by setting up food bars that guest can self serve themselves. I put out all the toppings and guest can decide what they like. I’ve done baked potato bars, taco bar, ice cream sundae bar, Â mimosa bar with fresh juices. It’s fun and interactive for everyone!Â
My two must-haves for summer entertaining are cold refreshing drinks always at arms reach and a killer playlist!
I am planning on lots of pool time with family and friends. We have a grill and it makes things so much easier when lots of people come over. Throw meats and veggies on there together, and add a big side salad, and presto – simple to feed everyone, no matter how many are over!
