I’m so excited to meet you and thrilled to work with Damn Delicious on this exciting expansion. I hope you enjoy making these recipes as much as I do creating them (and eating them, of course). So let’s get right to it!
Now sometimes we all need a healthy breakfast option. Just once in a while. I am definitely not against a doughnut, or three.
But breakfast is the most important meal of the day, and having a well balanced breakfast has been prove to stabilize energy levels preventing that mid-morning crash, cut sugar cravings and help cut additional snacking that can lead to unwanted weight gain.
So for my very first recipe, I’m bringing you one of my absolute favorites. Protein waffles. I promise you – they don’t taste any different to a regular waffle. Best of all, these are packed full of protein and good carbohydrates without the addition of protein powder. Instead, the eggs and cottage cheese give you all the protein you need.
You can easily double, triple or quadruple the recipe, and pretty much do anything with them. Freeze them for later, take them on the go, pack them in lunch boxes for the kids, or use them for a fun Sunday brunch with friends and family. These waffles are also practically effortless with the use of a blender. From there, simply pour the batter into the waffle maker. See, there’s only one blender to clean now.

Healthy Protein Waffles
Ingredients
- 6 large eggs
- 2 cups cottage cheese
- 2 cups old fashioned oats
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Combine eggs, cottage cheese, oats, vanilla and salt in blender until smooth.
- Pour a scant 1/2 cup of the egg mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes.
- Serve immediately.

These are the waffles I make all the time! I make 4 recipes at a time and then freeze them in quart bags to have as a quick protein snack or for breakfast.

Love the texture, love the protein amount, love the ‘no sugar added’! I soaked the batter, unblended, for about 8 hours… then used a hand blender to blend.
I used a mini round individual waffle maker (Crate and Barrel ceramic non-stick) and was able to make 12. Size is perfect for the toaster in the morning.
Question: Any idea how many grams of carbohydrates?
Delicious! I blended the oats into flour first, then added the other ingredients. Add almond extract and a bit of sweetener and they are birthday cake flavor!
Use oat flour and add baking powder!
After making the recipe and grinding the rolled oats as had been suggested here, the waffles were good but had a lot of texture still. Oat flour solved that. You cant tell that these are anything other than normal waffles now.
Oat flour is denser by volume than rolled oats so I ended up at 1-1/3c oat flour. Use a kitchen scale if you have one.
Made again today but made pancakes. Totally worked. Highly recommend!!
Made these yesterday morning. Our 2 year old grandson and us too, gobbled them up. I read through the reviews and ground up the oats separately, added 1.5 tsp baking powder to the oats, then ran cottage cheese in blender, added eggs, and oats a bit at a time and ended up adding 2 tbsp water. Delicious!!! Highly recommend.
I’ve pretty much left all of my other waffle recipes behind. These are easy, fast, and healthier than my other recipes. Now that my boys are older, they want high protein everything. No whey powder required here. They can easily go savory or sweet… but you might leave out the vanilla if you want a savory waffle.
I’ve also added a tsp of cinnamon to one batch and a rounded tbsp of powdered chocolate to another to make variations. Both are good. Imagine a chicken and waffles with mole chicken on top of one of these with a bit of dark cocoa powder in it?

I read through the comments & copied some of the suggestions (blending the oats into flour first, then putting it in a bowl; separately blending the cottage cheese until smooth, then alternating adding in the oat flour & eggs; added 1.5 tsp baking powder; added 2 Tblsp water).
We had these with either a little maple syrup, or with my homemade (low sugar ) blueberry jam. I ate 2 for a late breakfast, with 2 pieces of bacon, and I stayed satisfied until dinner.
I initially began making these as an attempt to get protein into one picky kid in particular. They’re such a hit! I make these 2-3 times a month and freeze to have on hand for on the go fillers for my kids and they obviously love them for breakfast. I’ve been making add in’s that I’m so proud to say go undetected – for one – TONS of spinach/arugula and chocolate chips as “Hulk waffles”, for another I blend beets (I roast and freeze in cubes) and blueberries for purple-red waffles. This is basically the only recipe of anything I’ve ever made where the healthy add ins are NOT rejected. I’ll continue to make this!!
These are great and so easy! I add a scoop of protein powder to up the protein a bit. They are my weightlifting grandson’s favorite breakfast, and helps his grandma prevent muscle loss too!

These are the absolute BOMB! Omg I’m addicted. Since I made these for the first time, I can’t stop making them and eating them obviously. I eat them for breakfast & usually as my nightly snack topped with berries. I have told all my friends too. I dream About the next time I eat them, they are that good!
I halved the recipe to try it out. Holy crap, are these good! Extremely pleased with how these turned out.

No, use the oatmeal straight from the package. I do recommend blending them into flour first.
Fabulous! My kids love them, and I love the high protein easy recipe. I get 5 giant waffles from the recipe (I think my waffle maker is a bit larger than yours) and they never last long! I’ve made this recipe weekly for a whole month now and it does not disappoint!! Thank you!

I make these every other week…and our family eats them fast enough that they never make it to the freezer. This is such a great basic recipe that I also mix it up a bit with flavors…for example, I omitted 1/2 cup of cottage cheese and 1 egg and swapped in a cup of banana, a handful of chia seeds and a teaspoon of cinnamon and banana bread waffles, here we come! Thank you for the fantastic recipe I can feel good eating and feeding to my children!

Wondering if anyone has made the batter ahead of time, then cooked the waffles a day later.
We are head on vacation and I’m trying to figure out the best way to travel with them.
I would think making the batter a day ahead would be fine – but I’ve not done it.
However, if you’re going to add in some baking powder like I did, add that just before you cook them.
So easy to make and tasted amazing. Halfed the recipe and used Nutri bullet to blend and made 3 in our standard waffle maker. Even my cottage cheese hating partner loved them! Great to get your protein intake up (we have both had bariatric surgery). Have a few friends that I will pass this on to.
These turned out great. I have a standard waffle iron and it made 12 waffles. I really love that it has normal ingredients that I generally have on hand, instead of specialty ingredients. Since my step daughter can’t have gluten so these were perfect.
Actually amazing and it is really hard to tell that they’re not “normal” waffles. Per previous suggestions (and because I have a small blender) I blended the parts first on their own, then blended the cottage cheese, eggs, and vanilla together before mixing both parts in a bowl. I have a Belgian style waffle maker and it yielded 6 full waffles (or 12 half/squares).

Such a fun recipe! I blended the cottage cheese by itself like other reviewers suggested, I also used only two regular eggs and four egg whites. I whipped the egg whites to create more volume and less calories. They worked so well!! Got about 4 large waffles.
Simple, easy, real, and tasty food! I added hemp hearts to bump up the protein, which I think changed the flavor a bit. Sadly, I got a little less than 5 waffles from the recipe, so I’ll be doubling the recipe for freezer waffles. I’ll also make some with pumpkin!
Added a full tsp of vanilla and a dash of cinnamon but otherwise made as is. I think I might add some additional cinnamon and maybe some nutmeg next time but the texture of these waffles is absolutely perfect. Family had no idea they were healthy until I told them (though they did ask if I was making oatmeal when they were cooking). No expensive mixes to make it ‘healthy’ – just good clean ingredients. Overall my new go to waffle recipe for sure – thank you!!
Hi, I tried to make them this morning and for some reason I couldn’t get them out of the waffle maker.. I tried a couple times but the batter would stick.. Any thoughts why it could be? I’ve been making other recipes without problem..

These are amazing. I’ve made them several times now. The only thing I do different from OG recipe is add 2t of almond extract. They taste like a waffle cone. No syrup needed. We eat them plain with fresh fruit. I make extra so I can freeze them for quick weekday breakfast. If freezing, I recommend only cooking until very light golden brown if you plan on reheating in the toaster.
Perfect! Everyone kept grabbing these ones when I made these and traditional waffles! They were just as happy to have either. No one was sacrificing by eating the protein waffles because they were just as good. Thanks for a great recipe!
My 1970s blender –I know, let’s get with the times! 🙁 –got all plugged up trying to mix whole oats and cottage cheese at the same time. I recommend FIRST pulverizing the oats and the cot. cheese separately, then blend together
I made these as pancakes and they are good as is, but I do enjoy them more w/ 1T of sugar free Mrs. Buttersworth. When paired w/ ground turkey sausage I don’t use sausage. I used 1/2 C of oats & cottage cheese, 1/4 tsp of vanilla, 2 eggs & added 1/2tsp of baking soda. I think next time I’ll skip the baking soda (added for a lift or little fluffiness. I saw that in different recipe) There wasn’t any lift, not needed 🙂 ).
So good! You would never guess the ingredients and they were very filling. I ground up the oats like some others recommended

these waffles are great tasting – nutty from the oats and a bit of a crunch – super easy to follow the recipe – the recipe makes quite a few waffles, so I put some in the freezer – Thanks for the great recipe!!
My waffles had a really weird texture. I followed the recipe exactly as written, other than adding a dash of cinnamon to the mix. They came out somewhere between rubbery, and chunky. But the flavor was good! So I think I’m going to try pulverizing the oatmeal first, then let blend and let the mixture sit for a while longer before cooking.
Absolutely love them, wonderful taste and so very healthy!! I mix everything in the food processor and let the batter rest about 20 minutes for the oatmeal to soak up the moisture. I eat these waffles with tons of fresh fruit. Super recipe and I thank you!!
Great recipe! I did swap out oats for bob red mills unbleached all purpose flour and wow! they are Fluffy! Definitely my new favorite way to make waffles.
This is honestly the first time I have ever left a recipe review but these are wonderful. Less messy and quicker that standard batter waffles and, for me, tastier. Kids loved them too. The don’t taste cheesy or eggy at all, bizarre! They didn’t expand in the iron like normal waffles do, I needed more mix to get a full waffle, but they still tasted light. Like some other reviewers I pulverised the oats first.
I am so intrigued by this recipe!! I usually opt for protein waffles from https://shop.kodiakcakes.com/collections/toaster-waffles-flapjacks, but i’m curious how these compare. Do you feel like they are still pretty fluffy? I love that you get so much protein without any added protein powder!
This recipe was outstanding! I had some homemade farmer’s cheese hanging out in the fridge (last week’s coronavirus lockdown activity), so I blended in leftover whey to make my own cottage cheese. Water or milk would have worked as well, I just eyeballed it to get the right texture. It was a great way to use up the experiment. I also used 1-minute oats instead of old fashioned oats, because that was all I had in the pantry. I was super pleased with the result. The texture was just like a regular waffle, and they came out cleanly from my new copper waffle maker (I used nonstick spray). Slight aftertaste of oatmeal, which I enjoyed. This is going to become a weekly staple on my macro-friendly eating plan! I drizzled maple syrup over it, but to lower the total carbs/sugar, next time I’ll go with whipped cream and berries.

Can u use fat free cottage cheese
Kind of in awe that these turned out so good. Daugher who usually turns nose up at weird after tastes and strange textures said these were “ok.” Which means a lot! Husband and I found them to be good with just maple syrup. Would love to try these as a base for fresh strawberries. Did cut in half for the three of us. Added just a splush of safflower oil and 1/4 tsp of baking powder.

I was a little skeptical about trying these. Usually, with most “healthy” recipe alternatives I use for pancakes/waffles, dont turn out that good. But I was SO suprised when I had my waffle this morning. It tasted SO good!! And there was no BS ingredients in here. I am def gonna make these again. Thank you so so much!

These are so good! I used quick oats and since I know they don’t hold liquid quite as well as old fashioned oats, I subbed out half of the oat flour for whey protein powder and these turned out SO DAMN DELICIOUS! Like, literally unreal that these are healthy. Only other substitution I made was not adding salt since protein powders tend to have a decent amount of that. Just put a few dabs of ghee on them once they were done and I’m still drooling. Thanks all!

Thomas, you can try to use egg whites instead but I am not entirely sure how much the recipe will change with this substitution.
I use the recipe to make pancakes. For the whole recipe, I’ve used 3 eggs and 6 egg whites and they turned out great. Freeze well too!
These were great! Eay and delicious as advertised, and got my toddler to eat a healthy breakfast– amazig! Just a couple alterations I made: added 2 tbsp of melted coconut oil, some cinnamon and added a bannana for sweetness and other benefits. We have a winner!

What a great idea! But as I am not an expert on food safety, I cannot really say with certainty. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps, Joannie!

I make these all the time. I add a half of a banana to the batter and dark chocolate chips. They’re good plain, on the go, and they freeze well. I love sending my teenager off to school knowing he had cottage cheese, eggs, and oatmeal for breakfast!

Hi there. I just got my meal prep cookbook and have been enjoying the recipes. I just made the protein power waffle recipe and noticed it differs from the one on your blog with the addition of yogurt. Are these two different recipe variations?
I am so glad you’re enjoying the meal prep cookbook! The recipes for the waffles are actually the same. The addition of yogurt, raspberries and blueberries are to make a complete meal prep breakfast container with the waffles as pictured in the cookbook. 🙂
While it didn’t go over too well in the waffle iron, instead of blending it i just stirred it by hand and it was definitely thick enough for pancakes! A little PB and honey on top and it was an amazing breakfast that lasted me a whole week!

So my doctor told me to stop eating waffles with nuts and fruit and start eating eggs and cheese, and I found this recipe. It really is brilliant. If you didn’t know they had eggs and cottage cheese, you’d never even know the difference. Because I make them, I do find them just a bit eggy. I found that if I purée all the ingredients until blended, and then add about 4 ounces of sparkling water, that they not only come out lighter and crispier, but I get about 4 more waffles from the batch.
I have used this recipe twice. Neither time did I have any problems with sticking (and I only sprayed my iron once).
The second time I did let the batter sit for about 20 minutes prior to cooking.
While the recipe tastes good I am having a hard time with the protein calculations.
Eggs are 6g protein each (36g total), my cottage cheese is 13g/.5 C (52g total), and oats 5g/.5 C (20g total). All together 108g protein.
I carefully measured .5 C mixture per waffle and got 9 waffles.
I am only getting 12g per waffle. (108g/9=12g/waffle)
Maybe you found specific brands with higher protein content. Can you tell me what you are using or do you have any suggestions?
I am a bariatric patient trying to incorporate protein into a more foods since I can only eat small amounts and have a daily protein goal.

If I want to add protein powder will it affect the consistency and texture? I just got some banana pancake protein powder and want to try it.
These were awesome! I cut the recipe in half and got 3 waffles. They were crispy on the outside and nicely cooked on the inside. I added a bit of baking powder and they rose nicely. I cooked some frozen blueberries with a bit of water and a small amount of monk sugar and then whirled it up in my Blendec. It made a nice blueberry syrup.
Overall. This is a keeper.

Awesome recipe! I don’t have a waffle maker, so forgive my substitutions. I basically made your protein waffle recipe into protein sheet pan pancakes! Made the batter as directed, then poured it into a 9×13 sheet pan and baked for about 17 minutes at 425 degrees, and then under the broiler for about 2 minutes to get it a little more brown. Easy peasy! It doesn’t really get golden brown like waffles, but I didn’t mind. A great way to get my protein in without eating all eggs all the time. 🙂

I used my 8 cup food processor. Aside from dangerously flirting with the max fill line, they turned out great! I ran the oats first to grind them up finer.

I was looking for a protein filled breakfast being that I am not a big breakfast fan. But I made these this morning and they were delish. I made mini waffles instead of the big ones. With this recipe I was able to make 12 mini waffles. Perfect for a quick breakfast and to go snack.

As is, this recipe did not work for me. I have a very good waffle maker that usually is fine, but this batter stuck to the waffle iron when I opened it up, causing the waffle to split in two. The outside of the waffle was crispy but the centre was gooey. Altogether it tasted like on odd omelette. I added 3 teaspoons of baking powder and a couple tablespoons of avocado oil, then they cooked up like proper waffles.
I have never left a review of a recipe before and I feel compelled to do so about these waffles. Finally a way to feed my kids a natural balanced breakfast without the begging! Thank you so very much for posting this.

I’ve made these twice now.
First batch were for a camping trip. Fantastic. Dense and filling and amazing. And if you crank the heat a bit at the end the get nice and crisp.
Now, I did have to tweak the recipe the second time because I’m lactose intolerant. Just not worth being sick.
So… PUMPKIN SPICE WAFFLES!
I used 2 cups of pumpkin puree and added pumpkin spice to the mix. Those are the only two changes I made. So good. Even more dense than the cottage cheese ones. Like, so thick if you drop one on the ground it’ll put a hold in the floor. Still, delicious, still mostly healthy, and a dairy free version.
I’m going to try them again with zucchini and shredded carrots for zucchini bread waffles!

You can actually cook the waffles ahead of time and refrigerate/freeze as needed. From there, I like to pop them in the toaster to heat them up!
Made a batch of these yesterday, followed recipe exactly – HUGE hit with my kids (6, 4 and 2) and husband. Put extras in the freezer and they toasted up like a dream in the toaster. SOLID RECIPE! Thank you!

We love these waffles!!! So easy to make. The first few times, I blended them for only 10-39 seconds and they were not light and fluffy as they are now rhat I blend for 90-120 seconds. The flavor is improved too and as my husband and I are dieting, we eat these twice weekly with blueberry syrup I make by cooking fresh blueberries with a couple tbsps of water or orange juice, no sugar and no butter!! They are delish. No trouble with sticking. Soray with oil. And leave on heated iron full 90 seconds!!
Mine stuck to the waffle iron. I then cooked the rest like pancakes. Very tasty
This is the worst recipe ever. It was pretty much like eating eggs that tasted terrible. The consistency was the worst. Ended up throwing out in the grass for the birds.

Made these as pancakes. They’re utterly divine – delicious, easy to make, great texture. Husband is a pancake lover and doesn’t understand why I’m always throwing new recipes at him instead of sticking to the one he likes, but I’ve been trying recipes with cottage cheese to increase the protein, and they’ve been awful. He says he’ll eat these pancakes all the time. I halved the recipe, which was no problem. This is now ‘the pancake recipe’ – no small honor in my kitchen. I added very, very small amounts of a few things – cinnamon, cardamom, nutmeg, baking powder, melted butter, brown sugar – because I wasn’t ready to part completely with my tried and true recipe. This is such a perfect base recipe to riff on. Next time I’m going to add half a small banana instead of sugar, see how that works. Thank you. I’ve bookmarked several of your recipes and now can’t wait to try them.
The bomb. I halved the recipe and made 2 big round waffles (there may have been enough for three skimpier ones). I checked one waffle too early and it stuck and separated; the one I left alone came out easily. Great tasting, healthy breakfast!
I really didn’t expect a recipe with 5 ingredients to taste as great as they did. Plus it was so easy to make! I’m always trying to make breakfasts with a high protein and get tired of eating eggs all the time. I’ll definitely be making these again. I have a large square waffle iron that makes 4 waffles and it made 3 of these (or 12 small).
These turned out great as pancakes, they’re super filling! I made half the recipe, and using a half cup of batter per waffle made 4 good sized pancakes. They definitely need something sweet as a topping though (and I’m someone who likes 90% dark chocolate and coffee without sugar…)

I’ve been making this recipe for months now and I love it .I freeze the batch and have them as a post workout snack.
I like to add a tablespoon of cinnamon and honey give it a bit more flavour.
I have yet to try them as pancakes.
I was wondering if there was anyway to cut the calories but still have the high protein. I have muscular dystrophy so I need the high protein but need to make sure I stay away from salt and high calories as I have heart problems also and don’t need to gain extra weight any suggestions

if you want to freeze these, would you make the waffle and then freeze or would you freeze the the batter and make fresh?

I am having trouble getting the waffles to cook through, seems like no matter how long i leave them in waffle iron the middle is still doughy/raw
I made these as pancakes instead of waffles, and got 11 nice-sized pancakes. I did make a few additions: added 1 tsp baking powder, 1/4 cup sugar, and 1 tsp cinnamon. I cooked them in 1/2 tbsp butter (total, for all pancakes). They are really delicious! More importantly, they are hearty and filling – one pancake kept me full until lunch. When I ran the stats on my pancakes (remember, this is with added sugar and butter), I got 144 calories, 5 grams fat, and 10 grams protein per pancake! This is my new weekday breakfast!

Oh my goodness! I’m not a fan of cooked protein powder, so when I saw these, I was excited to try them! 100% delicious! I divided the recipe onto 4 servings instead of six, and it made huge, fluffy, filling waffles! Froze the waffles I didn’t eat and then reheated them in to toaster and they were just as good as the fresh waffles! Wonderful recipe, thank you for sharing!!!

I put into a calorie counter and got 140 calorie for each waffle. I’d imagine given variations of ingredients and waffle iron sizes, it’s worth calculating your own.
I’m confused about the calories. In the nutrition box at the bottom it says the calories are 240 per serving with 6 servings. But in the recipe text it says each serving is 276 calories with 6 servings. Which is correct?

Wow, these are great. I used quick steel cut oats and no salt added cottage cheese. Also left out the additional salt. added some flax seed and cinnamon. Nice nutty flavor. I would have no problem serving these waffles to anyone. (I made a half batch and it made 2 full size waffle iron waffles.

These are delicious! However, when I imported the recipe to My Fitness Pal, the calorie count came out to 320 kcal each. can you give the breakdown of individual calories? I used a 2% cottage cheese, but that doesn’t seem to account for a almost 120 kcal per cup difference. Thanks!

I like the recipe, but the nutrition facts are a little too good to be true. The waffles only have 20g of protein if you divide the recipe into 4 waffles, whereas they only have 240 calories if you divide the recipe into 6+ Waffles.

I was looking for pancake and waffle recipes that didn’t use protein powder, and these rock! I get four Belgian style waffles from this recipe so it portions perfectly. As with any waffle, you have to know how to use your machine properly to get it perfectly crisp-tender, not soggy, not dry. Thanks!

My batter turned out a bit watery but using big farm fresh eggs maybe I could have only used 4-5 eggs. Had to fill the waffle maker right up but turned out nicely. Also used Greek yogurt instead of cottage cheese. Some of my gang liked it, others didn’t. Black and Decker waffle iron bought in 2016.

I was so excited to try these but realized I got rid of my waffle iron since I don’t often use it. I thinned the batter a bit with almond milk and made pancakes. My kids loved them, and so did I! Thank you for the great recipe!
I normally do not leave comments however, after enjoying these waffles I simply had to. I decided to substitute my normal name brand pancake/waffle mix with your recipe this morning. I deviated from the recipe by cutting the ingredients in half, adding cinnamon and blueberries. Halving the ingredients produced two fluffy 7 inch circular waffles. Honestly, I had my name brand mix ready to go–just in case–but surprisingly it wasn’t needed. My husband didn’t notice the difference and neither did I. I no longer need to buy name brand pancake/waffle mix. Thank you.
Do these taste fairly egg-y? What’s the texture like? are there enough oats that they don’t come out with a rubbery texture? I’ve tried high protein waffles/pancakes before and they’re always both eggy and rubbery! -_-

I just made these and it tasted a little sour..I’m guessing it’s from the cottage cheese. Is it supposed to have a slightly sour taste? :/
It should not have a distinct sour taste per se. Did you follow the recipe exactly as written without any substitutions?
But beware of the maple syrup you pour on the waffles. Per the nutrition label, 1/4 cup… merely a 1/4 cup mind you… contains 47 grams of sugar, which is the equivalent of almost 12 teaspoons of sugar.
I’m pretty sure all that syrup is for the benefit of a beautiful photo.

I would imagine that the steel cut oats are too hard to be thrown directly into the blender. Perhaps try soaking them with the cottage cheese overnight? That might help to soften them up sufficiently.

We loved this recipe we made pancakes and I was ableto get 12 pancakes using a measured quarter cup. They were nice in size and took no time in the skillet. Best recipe I’ve found so far and that is searching for 2 years. My husband couldn’t believe they had cottage cheese on them. Thank you for another recipe to add to my collection!

These were a huge fail for me. They stuck in my waffle iron, even though I sprayed it. I tried to move into the frying pan for pancakes, but they did not form. On top of it all, they didn’t taste very good. 🙁
JL, that sounds like a disaster! So sorry to hear that! These waffles have been recipe tested about 1,000 times now and we have never had any issues with the batter sticking to the waffle iron, unless the lid was opened before they were fully cooked. These are also meant to be served with syrup or some other topping as you would with any other type of pancake or waffle.
