Thanksgiving is in T-minus 48 hours.

Ummmmm, so how did we get here so quickly?

I thought we had another week or so.

And I’m not a last minute planner. At all.

I make lists.

Lots of them.

Months in advance, really.

Except this Thanksgiving really crept up on me.

Thank goodness I have this slow cooker though.

Between the scalloped potatoes and creamed spinach, I may not have to use the oven at all.

Plus, the marshmallows.

You always need marshmallows for Thanksgiving.

There’s no argument here.

You just do.

Now they will melt beautifully in the slow cooker from the residual heat.

BUT!

You know. I always love to pop this under a broiler for color.

Or a blow torch.

You pick.

Slow Cooker Sweet Potato Casserole

Ingredients

  • ¼ cup unsalted butter, melted
  • ¼ cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • 4 pounds sweet potatoes, peeled and diced
  • 1 ½ cups miniature marshmallows

Instructions

  • In a medium bowl, whisk together butter, brown sugar, cinnamon, vanilla, nutmeg and allspice.
  • Place sweet potatoes into a 4-qt slow cooker. Stir in butter mixture.
  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until tender.
  • Top with marshmallows. Cover and cook on low heat for an additional 5-10 minutes, or until melted.
  • Serve immediately.
