Sheet Pan Steak and Fries

The classic steak and fries easily made right on a sheet pan on ONE PAN! Bake your fries first, then add the steaks! EASY!
The term steak and fries has very strong date-night vibes associated with it. Like it’s something that you could only have on a special night, or a specific occasion.
But. I beg to differ.
I can do steak and fries anytime. Any day of the week, really. Breakfast, most importantly. Just throw a fried egg on top.
And now. You can actually have it any night of the week because it comes together on a single sheet pan.
I’m dead serious. Let the potatoes get a hard start so they get nice and crisp. Then, during the last 5-10 minutes of cooking time, throw on your steaks.
All you have to do is broil until desired doneness. So, no. We don’t need an occasion for this.
Sheet Pan Steak and Fries
Ingredients
- 4 1-inch-thick top sirloin steak, patted dry
- Kosher salt and freshly ground black pepper, to taste
For the garlic parmesan fries
- 2 russet potatoes, cut into 8 long wedges
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoons Italian seasoning
- ½ cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped parsley leaves
Instructions
- Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto one side of the prepared baking sheet. Add olive oil, garlic, Italian seasoning and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 20-25 minutes, or until golden brown and crisp, tossing occasionally.
- Preheat oven to broil.
- Season steaks with salt and pepper, to taste, and place onto the opposite side of the prepared baking sheet in a single layer.
- Place into oven and broil until the steak is browned and charred at the edges, about 4-5 minutes per side for medium-rare, or until desired doneness.
- Serve immediately with garlic butter, garnished with parsley, if desired.

I had to take my potatoes off early because they were burning under the broiler. The steak turned out perfect at 4 minutes per side but the broiler was too strong for the potatoes. I would love to figure out how to keep this one sheet pan and have it all turn out perfectly cooked! We enjoyed it though! It was great.Â
Maybe stupid question-but do you think I can make this with chicken cutlets instead of steak?
Made this last night and it was great. My steaks didn’t turn out quite as pretty as the picture… may sear them on cast iron next time for a minute before placing on the sheet. Still, it was all delicious. When I started the broil I moved my pan up under the broiler and may not do that again. The potatoes didn’t like it! Still, I kept an eye on it and everything worked out. Delicious!
This recipe was immensely easy and so delicious! My husband said I could’ve cut the potatoes wedges more thin and get 10-12 wedges per potato but I thought they were just the right thickness. So if you want crispier wedges go thinner and get 10-12 out of a potato.Â
Mmmmmm I’m not much of a steak and potatoes gal, but you did make this combo very appealing! My husband would love it!
The steaks seem so thin will they not be totally over-cooked while the fries are getting done?
The potatoes cook for 20-25 minutes. The steaks are only on the pan for 10 minutes, so they probably won’t be overcooked.
This was delicious and there is nothing leftover. The compound butter I highly recommend on the steak. The fries were a big hit . I will definitely make this again. Thanks for sharing the recipe.
This was AMAZING!!! Â The garlic butter REALLY made it! Â The fries were crispy and flavorful; the steak was juicy. Â Awesome, awesome recipe!
Any food you cook up always sounds. delicious to me. Damn delicious!!!!!!
Potatoes need WAY more time! It’s been almost an hour and I’m at 400 degreesÂ
How big were your potatoes? Maybe that’s the issue with the cooking time? Do you have an oven thermometer to check if your oven actually was at 375?
I’m going to try this for company next weekend along with the avocado egg appetizer and one of your veggie sides . Love so many of your recipes ,will post results.
Butters
I can’t wait to try it next week with my spouse. Thank you!
OMG! It looks so yummy. 😀
WORST RECIPE EVER !!!! Burned fries raw steak and a house full of SMOKE ! DON’T TRY IT !!!!
Was getting ready to cook and looking for honest review. Â ThanksÂ
Why is the bad review the honest one? Hmm…
Sounds so good. I’m going to use my cast iron pizza pans. And for all you skeptics about cooking steaks without firing up the charcoal grill; just give it a try. I’ve been doing it for years. Yes the grill is great, but sometimes the weather just doesn’t cooperate. The secret is to sear the steaks on all sides and then, pop into a VERY hot oven or broiler. My broiler is unreliable, so I just use a 500 degree oven.Â
My gas grill has been on the fritz for a year now. I have been cooking all my steaks on my stove in my 12″ cast iron fry pan. They come out yummy. You just need to make sure the pan is good and hot before you put the steaks in. I drizzle some olive oil on the steaks before I season with salt and pepper.
This dish, like always, looks mouthwatering. Â Wow, I was able to type and post with no jumping of the site. Â Yeah!!!
What temperature do you set for the broilerÂ
High, but please be sure to keep an eye on it! 🙂
I live in an apartment that has a smoke detector that very easily goes off. Does anyone know if this produces a high-or even moderate-amount of smoke when removing from oven? I really want to try this recipe, but also don’t want my neighbors to think our building is on fire!
My house is the same way! I just turn on the oven fan when I’m popping it out of the oven to alleviate some of the smoke. Hope that helps!
Does the garlic not burn?
No, it does not.
I have made steaks under the broiler before always good. Your recipe was spot on, great instructions, wonderful dinner, easy to change for one! Thank you!!!
Wow.. some people DO NOT read very well. Cause most of the questions on here you CLEARLY explained it in this blog post. Although the pan location on the rack in the broiler was not mentioned in the initial post. But you clarified it. And I just have to say you did not say “No” to Beth about the flipping. You said “No” to the removal of the pan &/or fries (potatoes). But clearly mentioned flipping after 4-5 min (or upon desired doneness). Lol.. I just wanted to Thank You for this recipe. Cant wait to try . And another thank you, for your very easy to understand, & detailed full recipe.
Broil on high or low or medium?
High, but please be sure to keep an eye on it! 🙂
Can you use any other kind of steaks??
Yes, of course.
This was delicious! But, I won’t cook it all on the same pan next time. The olive oil from the potatoes caught on fire under the broiler! Â Really scary!
So I’m not exactly sure why my taters are taking so long. They have been in for almost 35 mins are are just barely gold and still mushy.
I would like to see more posts like this. I definitely enjoyed every bit of it and I have you bookmarked to see new information on your blog.
My potatoes seriously burned
How big of a sheet pan do you use? Am currently making this recipe and am having to use two pans because I did not have a big enough pan for both the potatoes and the steakÂ
I prefer to use an XL sheet pan, about 20.25 x 14.25 x 1 inches.
Is Italian seasoning packaged or liquid form?
It is a dry seasoning mix.
I’ll try this without the potatoes because I am on a low carb diet, but the timing seems too short. I have cooked, pork steaks in the oven before and takes a lot longer, but not on broil and I’ll give it a try
what is the best kind of oil to use to oil the pan? olive oil?
Yes! 🙂
This looks Delicious! I definitely will be making this. Thank You!
I am making this for myself for Mother’s Day. Yes just for me, myself and I! The hubby and kids are on their own loll!
This looks so damn good! But I have to say… thank you for using pans that look like they been used before and not pristine clean. =)
Rustic is the way to go, right? 🙂
Made this tonight..followed recipe exactly as is and it was delicious!!! Thanks for this awesome meal.
I made this last night and it got rave reviews from my son and hubby who were skeptical about how tender/tough the steak would be. The potatoes were perfectly cooked and even though I did not top the steaks with garlic butter, they were very juicy.
I made this exactly as the recipe said but the steaks never got browned/caramelized or charred but were somehow well done with 5 mins per side. Also had to remover the potatoes after a few minutes of broil cause they were starting to burn! I’m not sure what i did wrong, it was a little disappointing
Do you put it in the highest rack under the broiler?
I recommend using the middle rack.
This looks sooo good!! I’ll be buying steaks and potatoes tomorrow and will be all set for Tuesday’s blizzard! So glad that I stumbled onto your page.
a beauty, thank you, and I see that you’ve taken the sheet pan thing to a new level, steak! wow, I’m impressed, thank you, and egg on top, why not?
My oven has a low and high broil. Not sure what the temp difference is? Which setting would you recommend?
High, but please be sure to keep an eye on it! 🙂
You did not give instructions on the garlic butter. Which sounds very important (yum!!!)
The link to the recipe is the words “garlic butter.”
OMG! This is heaven on earth. It looks so tasty, and I know it will deliciously taste. I have got to tell my mom to cook this.
I love the simplicity of this and less washing up is always a good thing!
This looks and sounds delicious. Just one clarification please. The original direction said to broil the steak 4-5 mins per side which usually means to turn the steak over halfway during broiling. When Beth asked if the steak needed to be flipped you answered no. If the steak is not turned does that mean it should be broiled a  total of 8-10 mins? Thank you!
Yes, the steaks should be flipped. 🙂
Read it again Sandy . The No was not for the flipping of the steaks.
I’m I bit confused by #6: Place into oven and broil until the steak is browned and charred at the edges, about 4-5 minutes per side for medium-rare, or until desired doneness.
This seems to indicate that you flip the steaks and cook for 4-5 minutes PER SIDE. If there’s no flipping involved, do you just cook for 4-5 minutes total?
Yes, flipping is involved.
I’m loving these sheet pan meals! But not much of a beef/pork person. Do you think I could use chicken breasts for this, perhaps pounded flat a bit? Or perhaps you have another chicken-based sheet pan meal in the works? 😉
Yes, you can try these instead:

This recipe looks fantastic! So easy
Pinned.
Ha! I basically made THIS DINNER for my husband, but I used MORE than one pan, that’s for sure! LOL! WHOOPS!
Looks delicious!! Do you have to adjust the oven rack when broiling? Also, just to be sure, you leave the potatoes on when broiling? I didn’t want to risk charring them. Thank you for posting this!! 🙂
No, no need to adjust the oven rack. And yes, you can leave the potatoes.
Are you baking the fries on the middle oven rack first, then moving the pan closer to the broiler for the broiling the steaks? If so, about how far from the broiler is the pan? Thanks for the recipe. I can’t wait to give it a try!
You can leave it on the middle rack.
Clearly, those steaks were not cooked under the broiler..Â
They actually were. Yes, REALLY.
That is such a fantastic way to cook steak and chips. Never thought of that before, really nice work (:
Do the fries stay on the sheet pan while the steaks broil?
Yes.
This looks so delicious and vibrant!
This looks amazing! Will you clarify some points? Do you remove the pan of potatoes to pre-heat the oven on Broil cycle? Do you remove the potatoes from the pan before cooking the steaks or leave them on the pan for the broiling of the steaks? I assume you broil 4-5 min then flip steaks and broil the other side 4-5 min.
No, you do not have to remove the pan or the potatoes. You can leave them on the pan. And yes, flip after 4-5 min.
I am imagining burnt potatoes if they are left under the broiler for that long??
I recommend using the middle rack to avoid burnt potatoes.
I like this. How long to get well-done steaks?
You can add an additional minute or two until desired doneness is reached.
