Strawberry Honey Oatmeal Bars and April Foodie Penpals

For the past couple of weeks, I’ve been super obsessed with anything that involved the word “bars” - Dalmatian Bars, Key Lime Cheesecake Bars, White and Dark Chocolate Cream Cheese Chocolate Cake Bars - and oatmeal - Baked Oatmeal, Oatmeal Cookie Granola, Oatmeal Chocolate Chip Cookie Muffins - so when I came across these strawberry honey oatmeal bars which combined my two new obsessions, I was in heaven. I know you’re probably so sick of my muffin recipes by now but I promise you, this is a good one. It might even be the best one. I mean white chocolate with macadamia nut? You know that this is just one of those marriages of flavors that just meld so well together, and they were only created to coexist with one another. Sorry, am I getting too philosophical here? Muffin Monday: Sugar-Crusted Strawberry Blueberry Muffins and Giveaway Winner

I hope you all had a great weekend. A good friend of mine and her boyfriend came over for brunch yesterday so we stuffed ourselves with Cinnamon Baked French Toast and Baked Eggs with Potatoes and Bacon while sipping on some amazing mimosas. The combination of orange juice, champagne, and fresh strawberry puree will send you to heaven, especially on a Sunday afternoon. Too bad I couldn’t enjoy it as much I should have. I haven’t had alcohol since New Year’s Eve so after a couple of sips, my stomach started burning.

Here’s a sad fact I just learned today. I don’t know how to cut and peel a mango. I’m sure I could learn a thing or two from some YouTube videos but after 24 years of existence, I just don’t know how to do it. See, my mom always took care of the fruit cutting for me. She’d peel the apples, hull the strawberries, and then cut the mangos into perfect little cubes. But when I tried doing that tonight, it was an #epicfail. I couldn’t even peel the damn thing and had to resort to a vegetable peeler.

Irish Beef Stew

No, it is not St. Patrick’s Day but like the Baked Honey-Mustard Corned Beef, this meal should not be reserved for just one day out of the year. I actually didn’t even make this for St. Patrick’s Day. I made it for… well, just dinner on a random night. It’s so easy to whip up, and it doesn’t even take much ingredients, but you should carve out about 2-3 hours to make this so you can really simmer the meat until its wonderfully juicy and tender, like melt-in-your-mouth tender.

Strawberry Banana Bread

Remember that #epicfail I had with the Meyer Lemon and Matcha Marble Pound Cake? How the sides were getting burned since the inside wasn’t getting baked in time? Remember how I also swore to never make a loaf cake again? Yeah, that lasted me like two seconds. As soon as I saw this recipe over at Averie Cooks, one of my favorite bloggers, I just had to give the loaf pan another try. And boy was I glad I did because it was far from an #epicfail. This bread baked just in the right allotted amount of time, and it turned out to be such a light and fluffy, fruitilicious loaf of bread. Did I really just say “fruitilicious”? Oh man. Well, you get my point. It’s a cinch to put together, and you’ll have a perfect loaf of bread to serve your breakfast needs as you’re darting out the door to work. Thanks for inspiring me to make loafs again, Averie!

I don’t think I’ve ever met anyone who disliked macaroni and cheese. I mean, it’s several kinds of cheeses melted together, which is then tossed in some pasta, preferably pasta noodles with holes in them so the sauce can get caught in those crevices. What’s not to like? My mouth is watering just thinking about it!

Slow Cooker Chicken Tikka Masala

Do you own a slow cooker? My family never had one when I was growing up. All we needed was a gas stove and an outside grill for Korean barbecue. We didn’t even use the oven! We had one but my mom would store her pots and pans in there. Outrageous, I know. And when I asked if we could ever bake some cookies, she’d say, “Well our oven doesn’t work.” I think what she meant to say was, “Well, I don’t know how to use it. And even if I did, I don’t want to take out all the stuff in there.” Yup, that is the life of a very traditional Korean family.

I have two donut pans, a regular-sized one and another one for mini donuts. But for some reason, I keep forgetting that I have them. I’m so obsessed with muffins that these poor donut pans aren’t being used. Well folks, that’s all about to change. I have slowly been making the transition to using only natural lighting for my photos. It gives off such a pure vibe, creating stunning spectrums of colors, but to be honest, it’s been an absolute pain. There are no windows in the kitchen so I’m actually going from the kitchen to the living room to take some of these photos. Just imagine constantly walking back and forth with a piping hot cast iron skillet in your hand. It’s not fun at all. Oh and not to mention the race against the clock when the sun starts to go down and you have no natural lighting to work with! But after many efforts, I have learned that making the gazillion treks from the kitchen to the living room is well worth it because in the end, nothing beats photos taken in natural light.

Peanut Chicken Lettuce Wraps

I love “clean-out-your-fridge” recipes where you literally clean out your fridge by using up all your leftover veggies from your fridge and freezer to create a pretty darn good recipe. That’s what this was. After making Pioneer Woman’s fantastic Tofu Lettuce Wraps, I still had at least 3/4 of a bag of Romaine lettuce hearts left that I had absolutely no idea what to do with. After some brainstorming, I figured I’d just make more lettuce wraps. They’re not only super easy to make but these babies are packed with lots of protein and veggies along with that added crunch from the peanuts, all swimming around in a flavorful stir-fry sauce. Oh and you can’t forget that generous drizzle of Sriracha for extra spiciness. Mmmmmm…

Muffin Monday: Strawberry Yogurt Muffins with Cinnamon Streusel

Strawberry season typically runs from June until mid-August but I think it’s safe to say that we hit strawberry season early this year. I was at my local grocery store and they were selling 1 pound strawberries for $0.99! And as you can see from the picture below, they’re not prune-y, gross-looking strawberries. They’re BEAUTIFUL! And they’re incredibly sweet. I had already bought 4 pounds of strawberries at Costco that morning but that doesn’t mean I didn’t grab two extra pounds. I mean at $0.99, you can never have enough strawberries.

"Muffinized" Hot Cross Buns

Before I get into these transformed hot cross buns, I need to rant about something. Why is it that every time I go to the gym, someone ALWAYS gets on the elliptical machine next to me when there is a whole row of open ellipticals? I just don’t get it. Okay I’ll admit it. I’m a bad food blogger considering this post is about two and a half weeks late. But in my defense, this meal should not just be limited to St. Patrick’s Day. It’s just too damn good to be eaten one day out of the year. I mean succelent slices of a salty yet slightly sweet corned beef pairing beautifully with lemony roasted cabbage along with some buttered roasted red potatoes and glazed carrots? Really?! This should be eaten everyday, which is exactly what Jason and I did until we cleaned up house.

Loaded Potato Skins

Every time Jason comes home, I love fattening him up. He’s completely deprived of quality, homemade food when he’s up north so I make it a mission to have his favorite foods all lined up. These potato skins was one of the many fattening, artery-clogging food items that I made for him when he was visiting during spring break. But then again since this was baked, I guess it’s not that bad for you, right?
