
Today was a very long and emotional day so I’ll have to keep this post a bit short today. Jason packed up his stuff and moved out to San Francisco since classes begin on Tuesday, and I’ve been such a train wreck.

So I have some fun news to share with you all! Here goes:
My Roasted Shrimp Enchiladas with Jalapeño Cream Sauce was featured on Huffington Post! Now you should know, as embarrassing as this is, that I didn’t really know what Huffington Post was. I know that some of my favorite food bloggers would tweet to @HuffPostFood, thanking them for the feature, but that was all I knew.

I hope everyone had a fun-filled weekend. Jason and I had a weekend getaway to Lake Tahoe where we jet-skied and did stand up paddle boating for the very first time, stuffed our faces with huge Mexican burritos while watching the sunset and watched the stars at night. It was absolutely gorgeous with the blue skies, the endless line up of huge pine trees and clear blue waters. It was definitely hard to leave that and come back to smoggy LA!

Chicken nuggets, we all love them, right? McDonald’s chicken nuggets are my absolute favorite, especially when they’re dunked into BBQ and sweet and sour sauce. But then I became a health conscious freak and swore that I would never touch their nuggets again.

I’ve been on a sandwich kick lately, mainly because it’s so easy to make, it’s perfect lunch food without giving you food coma and it’s entirely customizable. That’s how I created the Egg Salad BLTA Sandwich. But with this chicken caesar salad sandwich, no customization/adaption was needed. The recipe is absolutely perfect as is.

It’s amazing how quickly Monday rolls around. I get to run a few errands, go grocery shopping, make a few dishes, catch up on my google reader and then BAM!, we’re back at work.

I have never been so happy that it is finally Friday. This week was excruciatingly long, and with the start of school and all, traffic has taken a toll for the worst. I worked for 12 hours yesterday, finally getting off at 8:00PM just to get stuck in traffic for an entire hour! What are people doing on the road at that hour?!

Can you believe that summer is coming to an end? How is that even possible when it’s 97 degrees out?!

I know you’ve heard this so many times before but I’m going to have to say it too.

Joey Tribbiani from Friends was a crazy meatball sub lover, and as I was putting this sandwich together, I couldn’t help but think if Joey would approve of this sub. But once I took that first bite, I knew he’d be proud of me. After all, how can anyone resist a nicely toasted hoagie bun filled (Yes, filled! No skimping here guys! ) with super flavor-packed, tender meatballs sitting on a bed of homemade marinara and topped with melted mozzarella?!

This was a tough weekend for me. I felt so uninspired with everything - cooking, blogging, working, running… you name it. And on top of everything else, Jason had to work all weekend so I barely got to spend any time with him. Normally I wouldn’t be so upset about it but he’s leaving for San Francisco in 3 weeks and once he’s back up north, I probably won’t be seeing him for another month.

I am happy to say that I am finally fully recovered from my sickness. I thought I had the flu but I guess it was more serious than that because I had all the flu symptoms without the sneezing and coughing, which freaked the hell out of me so I went to the doctor to get everything checked out. The doctor ran all these blood tests and threw out all these scary words like “mononucleosis,” “tonsillitis,” and “streptococcus” only to have me wait for 48 hours to tell me that I don’t have mono. He then couldn’t even rule out the other two infections since the blood work didn’t come back in time (of course!) but he thinks I had tonsillitis. Yeah, going to the doctor = not fun.

So Jason and I went to Costa Rica a couple of years ago, and when we went, we took a couple of those disposable underwater cameras. We developed one of the cameras but saved the other one since there was still some film left to take more photos. But “saving it” really meant that it would be left in the back of the closet for over 2 years.
