Crunchy Nutella Granola Bars



Have I mentioned that I love granola bars? I’m sure I said it in passing with the Chocolate Chip Almond Butter Granola Bars and the No Bake Chewy Chocolate Chip Granola Bars. Okay but seriously, I LOOOOVE granola bars, especially this one. Why? Because of the Nutella, of course.

Nutella is definitely the star here. It provides such chocolatey-nutty goodness glue that holds everything else together, from the crunchy almonds to the sweet burst of flavor from the dried cherries. But best of all, these babies are crunchy. I’m definitely more of a crunchy type of granola gal rather than the chewy kind so these granola bars just sent me to the moon. I’ll be sure to make this again, but maybe next time I’ll add some pecans instead of the almonds, and some dried cranberries. And pistachios. And white chocolate chips. No wait, cinnamon chips.

Crap. There’s just too many choices!

One year ago: Cheesy Popovers

Crunchy Nutella Granola Bars (adapted from Mother Thyme):

Yields 10 bars

  • 2 cups rolled oats
  • 1 cup crispy rice cereal
  • 1/4 cup sliced almonds
  • 1/4 cup dried cherries
  • 3 tablespoons mini chocolate chips
  • 1/3 cup Nutella
  • 1/4 cup honey
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Lightly coat an 8x8 baking dish with nonstick spray; then line the baking dish with parchment paper.

In a large bowl, combine the oats, rice cereal, almonds, cherries and chocolate chips.

Stir in the Nutella, honey, butter and vanilla.

Spread the granola mixture into the prepared baking dish.

Place into oven and bake for 30 minutes, or until the edges have slightly browned. Let cool completely before cutting into bars.

I like to wrap them like little candies using parchment paper and then tying the ends with some pretty ribbon.
