Healthy Blueberry Green Tea Muffins
I’ve been craving some homemade muffins so I decided to make green tea muffins with some fresh blueberries. I was actually contemplating using white chocolate chips instead but since this is a “healthy” recipe, the fresh fruits were more fitting to the recipe. There’s not much butter or sugar so it’s mildly sweet, making it perfect for breakfast, and there’s only 2 teaspoons of matcha powder so the green tea flavor is very subtle. I especially enjoyed the fluffy texture of the muffins with the chunks of blueberries in every corner. But the best part about these is that you don’t have to feel guilty eating them!
Healthy Blueberry Green Tea Muffins (adapted from Fresh from the Oven):
Yields 12 muffins
- 2 cups unbleached all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1 egg, slightly beaten
- 1 cup milk
- 1/4 cup butter, melted
- 2 teaspoons matcha powder
Preheat oven to 375 degrees F.
Line a 12-cup standard muffin tin with paper liners; set aside. (If you don’t want to use paper liners, you could coat a muffin pan with cooking spray instead.)
In a small bowl, mix together flour, matcha powder, baking powder, salt, and sugar.
Add egg, milk, and butter, stirring only enough to dampen the flour. (The batter should not be smooth.)
Add blueberries and gently toss to combine.
Scoop the batter evenly into the muffin tray.
Place into oven and bake for 20 minutes, or until a tester inserted in the center comes out clean.
Remove from oven and cool on a wire rack.
