Chicken Tortilla Stack and a Giveaway!

Happy Cinco de Mayo everyone! I actually don’t really celebrate this holiday but hey, I’ll take any excuse to indulge in some Mexican food, especially when it involves a mile-high tortilla stack pizza with layers and layers of sour cream and cheesy goodness.
Hawaiian BBQ Chicken Taquitos

I’m a bit obsessed with anything involving pineapple and BBQ sauce so with much brainstorming (more like dreaming and then waking up to be completely inspired), I decided to make these baked chicken taquitos. They’re slathered on with my favorite BBQ sauce, loaded with caramelized red onions and freshly cut pineapple with melted sharp cheddar goodness throughout a crispy, yet tender tortilla.
Buffalo Chicken Quinoa Bites with Greek Yogurt Blue Cheese Dip

I hope you all had a wonderful, fun-filled weekend. The weather was gorgeous out here in LA in the high 70s so I decided to take a day off from blog work and enjoy the outdoors with my 5-year old niece, Sherman.
Sesame Chicken
Before I get into this sesame chicken goodness, can we first talk about last night’s episode of Grey’s? I’ve been following this show for years and although the show has plummeted in the more recent years, I’ve never missed an episode (yeah, I’m that much of a loyal Grey’s fan). But last night’s episode was quite amazing. I don’t think I’ve cried like that since the finale of season 6 when the shooter came in and killed off like half the cast. I mean the minute Avery flipped over that legal pad with the new name of the hospital - wow - tears just started streaming down my face. I think I started blubbering at some point.
I’m still a bit shaken up about it so if today’s post doesn’t make too much sense, it’s because tv world has totally taken over reality.
