Veggie Flatbread Pizza

Friday nights are usually take-out nights for us, whether it’s Thai, Chinese or pizza. It’s kind of a ritual we picked up to give us a chance to “have the night off” in a sense after a long work week. But sometimes the greasiness from all that food can be too much to handle. That’s why I made these whole wheat veggie flatbread pizzas. Not only that, my skinny jeans were not very happy with all that take-out food I was devouring on a weekly basis.
Hawaiian BBQ Chicken Taquitos

I’m a bit obsessed with anything involving pineapple and BBQ sauce so with much brainstorming (more like dreaming and then waking up to be completely inspired), I decided to make these baked chicken taquitos. They’re slathered on with my favorite BBQ sauce, loaded with caramelized red onions and freshly cut pineapple with melted sharp cheddar goodness throughout a crispy, yet tender tortilla.

Before I get into these amazing sloppy joes, lets first talk about gym etiquette. I go to the gym 6-7 times a week, but as much as I love doing the elliptical while watching Dexter, it’s been getting increasingly annoying to continually go to the gym day after day.
Slow Cooker Chicken Tikka Masala

Do you own a slow cooker? My family never had one when I was growing up. All we needed was a gas stove and an outside grill for Korean barbecue. We didn’t even use the oven! We had one but my mom would store her pots and pans in there. Outrageous, I know. And when I asked if we could ever bake some cookies, she’d say, “Well our oven doesn’t work.” I think what she meant to say was, “Well, I don’t know how to use it. And even if I did, I don’t want to take out all the stuff in there.” Yup, that is the life of a very traditional Korean family.
