Leftover Thanksgiving Turkey Pesto Panini
Can you feel it? That anxiousness and excitement where you’re so ready for Thanksgiving that you can’t even sleep, eat or focus at work?
Or wait, is that just me?

There’s so many reasons why I look forward to Thanksgiving. Sure, it’s the gorgeous bird at the center of the table and the fig-glazed ham and the amazing Yorkshire pudding that Jason’s brother-in-law makes. It’s also the elastic waistband-type pants that I have to wear too because I eat way too much than I could actually handle. But the biggest reason that I look forward to this holiday is for the massive amount of leftovers.
Leftover Hambone Soup
Whenever I make a ham for Thanksgiving or Christmas, I never know what to do with the leftover bone. My friend Prestyn once mentioned that it was great for stews but I never really thought to look for hambone stew recipes. I guess I thought they didn’t really exist, that is until I came across this amazing recipe on Never Enough Thyme. It’s an easy, simple recipe that allows you to be very creative. You can add in whatever you’d like best and it’ll turn out to be the best soup of your life.
Leftover Turkey and Swiss Panini
I really look forward to the leftover Thanksgiving sandwiches that come around just once a year. Last year we had these leftover sandwiches with stuffing soaked in gravy (adapted from Ross Geller’s “Moistmaker”), which were absolutely to die for. But because we only had leftover turkey this year, we decided to try this new sandwich recipe from Pioneer Woman. It’s made with leftover turkey and cranberry sauce that’s mixed in with some chopped pecans, some dijon mustard, a bit of jam for that hint of sweetness, and of course, melted swiss cheese. Does it sound as amazing as it seems? YES! It’s beyond amazing. It’s beyond delicious. It’s out of this world. Really.
