Hawaiian BBQ Chicken Taquitos

I’m a bit obsessed with anything involving pineapple and BBQ sauce so with much brainstorming (more like dreaming and then waking up to be completely inspired), I decided to make these baked chicken taquitos. There’s so many reasons why I look forward to Thanksgiving. Sure, it’s the gorgeous bird at the center of the table and the fig-glazed ham and the amazing Yorkshire pudding that Jason’s brother-in-law makes. It’s also the elastic waistband-type pants that I have to wear too because I eat way too much than I could actually handle. But the biggest reason that I look forward to this holiday is for the massive amount of leftovers.

Making chinese food at home is one of my absolute favorite things to do, mainly because it’s so much cheaper, tastes so much better and you also don’t have any skimped ingredients! It’s also quick and easy, making it a perfect weeknight meal.
Now you should know that Jason hates all kinds of Chinese food because it’s too greasy but when I put this on the table, he devoured it so quickly and he didn’t even leave a single rice grain on his plate!
Yeah, it’s just that good. Fresh pineapples, a perfect balance of sweetness, sourness and plenty of flavor. Plus, you have the Sriracha for extra spiciness!
