Pad See Ew



Pad see ew is one of my favorite Thai dishes. Every time Jason and I order Thai, we have to get this dish. Jason doesn’t it like it as much as I do, which kind of works out because then there’s more for me. But as much as I like this dish, it’s just not worth spending $10.25 on it. It’s such a small serving. I mean there’s barely enough for leftovers to take to work the next day! But thankfully, I found a homemade version that is super quick to make. And guess what? It’s cheaper, healthier, AND it tastes better than take-out.

Thai Chicken with Rice Noodles



I think I found my true love. Okay my second true love (first one goes to Jason). Are you ready for it? It’s rice noodles. Yes, rice noodles. They are seriously the best noodles in the world. It’s just so wonderfully slippery and thin, and it tastes so much better than regular pasta noodles like spaghetti or penne. Plus, they’re gluten-free. Well, to be honest, I don’t really care about gluten-freeness but it’s healthier so that’s all that matters. But enough about the noodles. The star of this dish is the chicken.

Penne with Thai-Style Pesto



Thanks to the invention of the food processor, pesto making has become such a simple task, transforming a ten minute dinner into something amazing. The intriguing combination of basil, sesame seeds, soy sauce, garlic, lime juice, jalapenos, and olive oil tossed in penne pasta created a unique Italian-Asian Fusion dish. It had such a simplicity to it, yet it burst with spiciness from the jalapenos and such freshness from the lime juice. I added some Sriracha for that extra spicy kick and it served as a wonderful complement to the pasta. I enjoyed it very much for dinner and I’m sure I’ll enjoy it just as much when I eat this during class tomorrow!
