Cheeseburger Grilled Cheese
This will basically be the best grilled cheese of your life – stacked with cheesy, meaty goodness! Perfect for a quick dinner!
Anything that involves the word “cheeseburger” is an automatic win.
For example, take cheeseburger pasta. Or a cheeseburger quesadilla.
And of course, there’s the classic actual cheeseburger.
So when I present you with this cheeseburger grilled cheese, no one loses in this one.
In fact, I think I like it better than a cheeseburger.
There’s no lettuce or tomatoes to get in the way!
It’s just meet, cheese, tomatoes and crisp, crusty-buttery bread.
Done.
- 1 tablespoon olive oil
- 1 pound ground beef*
- 1 1.25-ounce package taco seasoning
- 1 ½ cups shredded cheddar cheese
- 2 Roma tomatoes, diced
- 4 tablespoons unsalted butter, at room temperature
- 8 slices whole wheat bread
Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
Stir in cheese and tomatoes until the cheese has just melted.
With a butter knife, spread butter on one side of each slice of bread. Place 4 slices, buttered side down, on work surface. Divide ground beef mixture evenly on all slices. Top with remaining slices, buttered side up.
Heat the skillet over low heat. Add sandwiches and cover; cook, turning once with a spatula, until golden brown and the cheese has completely melted, about 2-3 minutes per side.
Slice and serve immediately.
*Ground chicken or turkey can be substituted.
