Combine graham cracker crumbs, butter, sugar, and cinnamon. Press crumb mixture onto the bottom and the sides of the pan; place in freezer.

Add water and place metal trivet into the instant pot. Lightly oil to springform pan or coat with nonstick spray.

Beat cream cheese until smooth and creamy. Beat the remaining sugar, cornstarch, eggs, heavy cream, vanilla, lemon zest, and almond extract.

Select manual setting; adjust the pressure to high, and set for 28 minutes. 

Remove crust from freezer; pour cream cheese mixture into the prepared pan. And gently place the prepared pan on top of the trivet.

Remove cheesecake and let cool and place into the refrigerator.

Remove cheesecake from pan; top with strawberry mixture.

In a medium bowl, combine jam and water. Cover loosely and place into the microwave until melted and smooth. Stir in strawberries until evenly coated.

Serve immediately.
