Combine graham cracker crumbs, butter, sugar, and cinnamon. Press crumb mixture onto the bottom and the sides of the pan; place in freezer.
Add water and place metal trivet into the instant pot. Lightly oil to springform pan or coat with nonstick spray.
Select manual setting; adjust the pressure to high, and set for 28 minutes.
Remove crust from freezer; pour cream cheese mixture into the prepared pan. And gently place the prepared pan on top of the trivet.
Remove cheesecake from pan; top with strawberry mixture.
In a medium bowl, combine jam and water. Cover loosely and place into the microwave until melted and smooth. Stir in strawberries until evenly coated.
