Ingredients
¼cupbalsamic vinegar
1tablespoonbrown sugar, packed
1small seedless watermelon, cut into wedges
4ouncescrumbled goat cheese
¼cupmint leaves
Instructions
To make the balsamic reduction, add balsamic vinegar and brown sugar to a small saucepan over medium heat. Bring to a slight boil and reduce by half, about 6-8 minutes; set aside and let cool.
Serve watermelon wedges with goat cheese and mint, drizzled with balsamic reduction.
