Cakey cookies with chocolate chunks and rainbow jimmie sprinkles – fun for kids and grown-ups!
Ingredients
2cupscake flour
⅔cupsall-purpose flour
¾teaspoonbaking soda
¼teaspoonsalt
1cup(2 sticks) unsalted butter, at room temperature
1cupsugar
1large egg
2teaspoonsvanilla extract
1(6-ounce) bag 62% cacao semisweet chocolate baking chunks
½cuprainbow jimmie sprinkles
Instructions
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
In a medium bowl, combine flours, baking soda and salt.
In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high until well combined, about 1-2 minutes. Beat in vanilla and egg until well combined. Gradually add flour mixture to sugar mixture at low speed, beating just until incorporated.
Gently fold in chocolate chunks and sprinkles.
Drop tablespoons of batter onto prepared baking sheet. Place into oven and bake until edges are golden brown but center is still moist, about 10-12 minutes.
