A super simple and fast side dish to accompany any meal. Even the pickiest of eaters will be begging for seconds and thirds!

Ingredients
24ouncescauliflower florets*
¼cupcoconut oil, melted
4clovesgarlic, minced
Kosher salt and freshly ground black pepper, to taste
¼cupfreshly grated Parmesan
2tablespoonschopped fresh parsley leaves
Instructions
Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
Place cauliflower florets in a single layer onto the prepared baking sheet. Add coconut oil and garlic; season with salt and pepper, to taste. Gently toss to combine.
Place into oven and bake for 20-25 minutes, or until tender and golden brown.
Serve immediately, sprinkled with Parmesan and parsley, if desired.
Notes
*24 ounces cauliflower florets is equal to about 5 cups.
