Combine peach slices and mango nectar in blender until smooth.
Pour peach mixture into champagne flutes until half full.
Fill glasses with Prosecco.
Serve immediately, garnished with peach slices, if desired.
Notes
Use frozen peaches. The frozen peaches will help achieve that favorited icy cold, thick slushy consistency, ideal to keep the cocktail nice and refreshing without watering it down with ice. Frozen peaches are also readily available year round for convenience.
Choose a brut or extra dry prosecco. A brut or extra dry prosecco is great here – it does not have to be anything fancy or overpriced as it will be blended with other ingredients.
Chill everything. As bellinis are best served cold, be sure to chill the prosecco and glassware before serving. Always pour the prosecco slowly to manage the bubbles and prevent overflowing.
Garnish as needed. While garnishes are not required, a simple garnish (ex. peach slice or mint sprig), will elevate your cocktail to the next level, perfect for entertaining and hosting!
