Ingredients
2cupsleftover rotisserie chicken
½cupdiced red onion
½cupdiced apple
½cupgrapes, halved
¼cupdried cranberries
¼cupslivered almonds
½cupplain Greek yogurt
1tablespoonfreshly squeezed lemon juice, or more, to taste
½teaspoongarlic powder
Kosher salt and freshly ground black pepper
8slicesbread
4leavesBoston bibb lettuce
Instructions
In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.
Serve sandwiches on bread with chicken mixture and lettuce.
