2(14.5-ounce) cans diced fire roasted tomatoes
1(15-ounce) can cannellini beans, drained and rinsed
1(15-ounce) can red kidney beans, drained and rinsed
1(15-ounce) can black beans, drained and rinsed
Instructions
Heat olive oil in a Dutch oven or large pot over medium high heat. Add garlic, bell peppers, onion, carrots, and mushrooms. Cook, stirring frequently, until carrots begin to soften, about 8-10 minutes.
Stir in cumin, chili powder and oregano; season with salt and pepper, to taste.
Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks.
Stir in beer and reduce heat to low; simmer, covered, until slightly thickened, about 15 minutes. Stir in tomatoes and beans and simmer until thickened, an additional 15-20 minutes.
