Berry Crostini with Whipped Goat Cheese

Patriotic berry crostini with an incredibly creamy goat cheese spread. And you won’t believe how easy this is to make!
Ingredients

cup
strawberries
,
thinly sliced
¼
cup
blueberries
1
tablespoon
freshly squeezed lemon juice
1
tablespoon
sugar
1
baguette
,
thinly sliced, toasted
2
tablespoons
olive oil
½
cup
crumbled goat cheese
2
tablespoons
heavy cream
1
tablespoon
confectioners’ sugar
¼
teaspoon
vanilla extract
Instructions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a small bowl, combine strawberries, blueberries, lemon juice and sugar; set aside.
Place baguette slices onto prepared baking sheet; drizzle with olive oil. Place into oven and bake for 8-10 minutes, or until golden brown.
In a medium bowl, whisk together goat cheese, heavy cream, confectioners’ sugar and vanilla until smooth.
Spread goat cheese mixture on each baguette slice and top with 3 slices strawberries and 1 blueberry.
Serve immediately.
