Berry Crostini with Whipped Goat Cheese
Patriotic berry crostini with an incredibly creamy goat cheese spread. And you won’t believe how easy this is to make!
With July 4th right around the corner, I’m in desperate need of quick and easy dishes, preferably ones that don’t involve any cooking time. So wIth that said, I’ve prepared you with a quite fantastic, yet so incredibly easy, berry crostini.
Here’s how it comes together:
You start off with a simple goat cheese mixture, whipped with a bit of heavy cream, confectioners’ sugar and vanilla extract. If you really want to go all out, I’d even throw in some vanilla bean seeds. So while you slather that on some toasted bread, make sure to macerate some strawberries and blueberries with a bit of lemon juice and sugar. This will let the berries marinate and caramelize in its own juices, leaving you with some gorgeous, sugar-glazed berries. When all is done, go ahead and layer those berries on top of the goat cheese and serve. Now how easy was that?
The presentation is gorgeous and like I said, it takes so little to throw these together. They’re perfect as an appetizer, as a dessert or even a snack. Either way, you’ll be grabbing a handful of these bites before you know it!
