In a large pitcher, stir in white wine, peach schnapps, peaches and raspberries.
Let chill in the refrigerator for at least 2 hours, preferably overnight, about 12-24 hours.
Serve over ice with sparkling white wine, garnished with mint, if desired.
Notes
Pick the right wine. The wine does not have to be anything fancy or overpriced, just something you don’t mind sipping on. Keep to inexpensive white wines such as pinot grigio or sauvignon blanc.
Make ahead of time. Sangria tastes better the longer it sits. Let the sangria sit in the fridge for at least 2 to 4 hours, but preferably overnight (about 12-24 hours). This will allow for everything to come together for maximum flavor infusion.
Add bubbles just before serving. Top the sangria off with sparkling white wine (or club soda) right before serving to prevent the bubbles from going flat.
Keep it cold. To keep the sangria from being watered down with ice cubes, use frozen peach slices or raspberries instead.
