Green Smoothie
A refreshing smoothie loaded with fruits, spinach and Greek yogurt, and it doesn’t even taste healthy!
I never really stop to think as to how fortunate I am. I was in SF over the weekend visiting Jason and we went to a Korean mom and pop shop that makes the most amazing kimchi fried rice. We got 2 orders of it, except mine had brown rice. But when I saw the sign that said, “Brown rice, $1 additional,” it really hit me as to how economically hard it can be to eat healthy.
During grad school, I did so much reading on the obesity epidemic that happens here in the US, which really is a severe public health crisis. Of course there are so many factors that come into play here, like eating too much and exercising too little, but a huge factor that plays here is the fact the healthy food costs more than junk food.
That being said, I am incredibly grateful that I have both the accessibility and affordability to consume healthy foods, like this green smoothie. It may be a bit daunting with the whole spinach situation but it has such a mild flavor that you won’t even know that it’s there. Jason took a sip of it and was really shocked that spinach was in this at all!
Green Smoothie
Ingredients
- 1 cup strawberries
- 1 orange, chopped
- 1 banana, chopped
- 2 cups spinach leaves
- ⅓ cup Greek yogurt
Instructions
- Combine the strawberries, orange, banana, spinach, Greek yogurt and 1 cup ice in blender until smooth.
- Serve immediately.

When you say an orange chopped do you mean to leave the peel on or take the peel off?
Yes, the orange should be peeled.
