Sausage, Potato and Green Bean Foil Packets
Sausage and veggies packed in easy foil packets. Perfect for camping or a quick dinner! Can be baked/grilled.
I have never been a fan of green beans. Like ever. I wouldn’t touch it with a 10-ft pole.
Except if you throw it in a foil packet with sausage, potatoes, mushrooms and cajun seasoning – you won’t know what hit me. Green beans instantly become my best friend.
I’m not sure what it is but green beans suddenly do not taste like green beans in these foil packets. They taste like gold. No joke. And your picky eaters might say the same.
Sausage, Potato and Green Bean Foil Packets
Ingredients
- 1 12.8- ounce package smoked andouille sausage, thinly sliced
- 1 pound baby red potatoes, quartered
- 1 pound green beans, trimmed
- 8 ounces cremini mushrooms, halved
- 1 onion, chopped
- 4 tablespoons unsalted butter, divided
- 4 teaspoons cajun seasoning, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- Cut four sheets of foil, about 12-inches long. Divide sausage, potatoes, green beans, mushrooms and onion into 4 equal portions and add to the center of each foil in a single layer.
- Fold up all 4 sides of each foil packet. Add butter, cajun seasoning, salt and pepper, to taste; gently toss to combine. Fold the sides of the foil over the sausage, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 12-15 minutes.*
- Served immediately, garnished with parsley, if desired.

I’ve made a few different foil pack recipes but my potatoes never end up looking like yours: browned and crispy! I want to make your recipe tonight so how can I get my taters like yours?
We’ve made this recipe a couple times now while camping. I do cheat and use a bag of frozen green beans. I forgot mushrooms once but this was still a fantastic meal!!
This is super easy and tastes great. We love the spiciness of the andouille and the cajun seasoning. The different textures of the ingredients are awesome. You literally can’t mess this up. We have been making it at least once a week b/c its so easy on a weeknight.
I love this recipe! It is quick, easy, and left overs are just as delicious! I haven’t tried the recipe on the grill, but needed to increase the cooking time to 40 minutes at 425 degrees as 18-20 minutes was not long enough. Although this could be due to my oven!
So good!! Family of four and we made our own packets. My daughters are 4 and 6 and they had so much fun, especially because they had their “own dinners”. Will be making more foil packets for sure. Thank you for a very yummy and fun recipe!
How long do you think these would stay uncooked in a cooler or RV fridge? Wondering how far in advance they could be made for a multiple-day trip!
Amazing! Quick to throw together and absolutely DELICIOUS! I have a household mixed with picky kids and a hard to truly satisfy hubby when it comes to dinners and this was a hit all the way around even with me doing a TBS of cajun seasoning in each pack instead of a tsp. I made some plain long grain white rice since I made it spicy but even with the mix up everyone got seconds!

I always make the same foil pack in the summer (potatoes, carrots, onion, butter, w/obscene amounts of pepper – meat on the side), and this was a nice way to switch things up! Why didn’t I think of putting the sausage right in the foil pack before? Gives a nice flavour and makes dinner that much easier. I will definitely be making this again. I did melt the butter and toss everything together in a big bowl before putting in the foil, I just find it a little easier/faster and less messy. Thanks for the recipe!
Loved this! After reading some of the reviews I added a second layer of foil and grilled for just under 40 minutes — the potatoes were perfectly done and the beans were slightly crispy – it was perfect! Will make again.
Delicious made it tonight didn’t have mushrooms so used red bell pepper and add chopped garlic . Definitely will be making this often .

Any tips on how to make this in a Dutch Oven, instead of foil packs, over charcoal (for camping)? And did I get it right that potatoes that weren’t parboiled took 40 minutes to cook?
What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment when making substitutions and modifications.
Just wanted to check — do the potatoes need to be cooked or boiled before putting them in the foil packets with the other ingredients?
If you plan to use large potatoes, then yes, they should be parboiled ahead of time. But if the potatoes are cut small enough, they should cook through in the allotted time without parboiling.
This foil packet meal was quite tasty and easy. I prepared it the day before a camping trip, refrigerated overnight, and tossed it in the cooler as we were leaving. I used regular smoked sausage as the only available in the local Publix was hot & spicy Cajun-style (likely a bit too spicy for my 10 y.o.). I was able to find tiny baby red potatoes so I didn’t need to quarter them and I also used Haricot Vert instead of regular green beans. I mixed it all in a bowl along with some minced garlic and a good drizzle of EVOO then divided among the heavy duty foil strips (double wrapped). We grilled on open charcoal campsite grill for about 30 minutes. Delicious! Thanks for a great recipe.

When cooking this dish in the oven, should I still use aluminum foil to separate packets?
Yes, absolutely.
Great dish but next time will make adjustments. 1st of all the dish as listed is HOT, spicy. I used beef smoked sausage (not andouille) and half the Cajun seasoning and it was still pretty warm. Next time I will use larger pieces of foil and I will most definitely cook at least 45 min, as necessary for veggies to be cooked well. Will definitely repeat though! Yum!
EXCELLENT! I only used olive oil. Boiled the potatoes for at least 5 minutes. I fried up the sausage, onion, mushrooms until done. Seasoned all. I then added all together with my garden fresh frozen beans. Cooked for 35 minutes at 350
