One Pan Pizza Chicken
Win win chicken dinner! A ONE PAN meal. And it’s a LOW CARB cheesy goodness meal for the whole family to enjoy on a busy weeknight!
Guys.
I’ve been stuffing my face with Korean street food for the last 72 hours.
And it’s been amazing.
Epic amazing.
But.
I need some American food.
And all I’ve been thinking about is this.
An all-American classic pizza chicken bake.
It has all the benefits of a cheesy pizza.
Without the carbs.
So we all win here.
And since this is low carb, maybe we can add a few more pepperonis.
Because we really need to make up for the difference somehow.
One Pan Pizza Chicken
Ingredients
- 4 boneless skinless chicken breasts
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 28-ounce can crushed tomatoes
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon crushed red pepper flakes, optional
- 1 cup shredded mozzarella cheese
- ¼ cup mini pepperoni
- ¼ cup basil leaves
Instructions
- Preheat oven to broil.
- Season chicken with salt and pepper, to taste.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook, flipping once, until cooked through, about 4-5 minutes on each side; set aside.
- Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Stir in crushed tomatoes, basil, oregano, parsley and red pepper flakes; season with salt and pepper, to taste.
- Bring to a boil; reduce heat to low and simmer, stirring occasionally, until sauce has thickened, about 15-20 minutes.
- Return chicken to the skillet. Top with mozzarella and mini pepperonis.
- Place into oven and cook until melted and golden brown, about 2 minutes.
- Serve immediately, garnished with basil, if desired.

So basically you are making chicken parmesan but adding pepperoni to it.
The chicken is not breaded like traditional chicken Parmesan so it’s not exactly the same. 🙂
This was fantastic! I loved the flavor of the sauce. I will add some oregano seasoning to the chicken next time as well. (I love oregano!) The pepperoni added the perfect flavor to the chicken. Another great one pan dish. Thank you for sharing your gift with us! 🙂

This is the second recipe I’ve made off this site and both have been huge successes! The flavor of this was simply amazing. We plan on using the homemade sauce recipe for a multitude of other dishes that call for spaghetti or pizza sauce, too! Really putting my basil plant to use. I used regular-sized turkey pepperoni and they worked well, too. I’ve been talking about making the Korean beef bowl and have all the ingredients – S.O. was skeptical until I said recipe’s from the site that I found those two other dishes you loved – now keeps asking when I’m going to make the Korean beef bowl. 🙂 Thank you so much, I just bought e-version of your cookbook.

You can use any kind of skillet of your choice – stainless steel, nonstick, etc. It’s up to you and your personal preferences.
I love this recipe. It reminds me of the classic movie with Goldie Hawn and Chevy Chase, “It Seems Like Old Times.” Where they have chicken pepperoni. When I watched it as a little girl I always wanted to try it. This sounds just like what it would be like.
We made this for dinner today, served over some white rice, and even the picky kid ate it! Excellent recipe – thanks.
