Roasted Cauliflower Soup
You will not believe that this is actually cauliflower soup! It is so creamy, so comforting, and packed with so much flavor with healthier ingredients!

We woke up to an inch or two of snowfall, giving us a beautiful white Christmas.
I personally didn’t leave the house in 17 degree weather but I was still able to see the blanket of snow from the window.
It’s all the same, right?
I was honestly just too busy faceplanting myself into this cauliflower soup.
It’s the creamiest of all soups, and it has cauliflower in it, so it has to be good for you, right?
We’re just going to overlook this heavy cream situation but hey, we need the heavy cream (although half and half should also do the trick!).
Roasting is key here, guys. Both the garlic and cauliflower get roasted in 30-35 minutes of heaven.
From there, you can use an immersion blender or blender (in batches) for the best winter soup you’ll have in 2017.
Roasted Cauliflower Soup
Ingredients
- 1 head garlic
- 4 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper
- 2 heads cauliflower, cut into florets
- 1 onion, diced
- 5 cups vegetable stock
- 3 fresh thyme sprigs
- 1 bay leaf
- ½ cup heavy cream
Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Cut head of garlic, about 1/4-inch, to expose tops of garlic cloves. Place garlic head, cut side up, in a sheet of foil. Drizzle with 1 tablespoon olive oil; season with salt and pepper, to taste. Fold up all 4 sides of the foil and cover tightly.
- Place cauliflower florets in a single layer onto the prepared baking sheet. Add 2 tablespoons olive oil; season with salt and pepper, to taste. Gently toss to combine. Place garlic onto the baking sheet.
- Place into oven and roast until cauliflower and garlic is tender and golden brown, about 30-35 minutes. Let cool before squeezing cloves from skin.
- Heat remaining 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add onion, and cook, stirring occasionally, until tender, about 3-4 minutes. Stir in vegetable stock, thyme and bay leaf. Bring to a boil; reduce heat and simmer, covered, for 5 minutes.
- Stir in cauliflower and garlic. Bring to a boil; reduce heat and simmer, covered, until cauliflower is tender and falling apart, an additional 10 minutes. Puree with an immersion blender until desired consistency is reached.
- Stir in heavy cream; season with salt and pepper, to taste. If the soup is too thick, add more vegetable stock as needed until desired consistency is reached.
- Serve immediately.

Just made this soup and it’s incredible. I like reading what others have done with the recipe, so will share as well. Roasted cauliflower and onion as directed to a color of rich deep brown which gave the soup a deeper color than pictured. Roasted large head of garlic as directed. Used full strength vegetable broth, not low sodium. The flavor of this soup was rich, almost as decadent as the lobster bisque enjoyed at the steak house! As far as the amount of the vegetables, broth, cream/milk or not, you can’t go wrong. Soup is so forgiving , just taste to your liking.
It would be nice to have cup approximations for the cauliflower.
This is an absolutely delicious recipe. And I don’t even care much for cauliflower. I did add a pinch of red pepper flakes and a can of cheddar cheese soup. Blended to absolute smoothness. YUM! A recipe worth saving.
I just made this soup, relatively easy, straight forward to make. It’s smooth, creamy, and full of flavor. If you like a garlic taste, this soup if for you!
It’s a holiday soup for sure. Going to pair with a ham and brie sandwich…rich through and through.

Just made this soup and it’s delicious. I just used 1 cauliflower head and 3 1/2 cups of broth and I could if used a bit more broth but super delicious.
I wonder if I can freeze it
DamnDelicious like the web site, although I changed it slightly. I used a big sweet onion, coarsely chopped and roasted with the cauliflower & garlic, so I didn’t sauté anything. I reduced the broth because I wanted it thick. I added a good dollop of sour cream with the regular cream, and a wee bit of fresh nutmeg. If you think it’s bland, you’re not seasoning the vegetables adequately. Kosher salt, freshly ground pepper, both white & black, good oil. Simple really. Thank you for the recipe. This is a good standard to keep.
I added 3 sweet potatoes as roasted with cauliflower. added an extra clove roasted garlic… omg yum. wondering if coconut milk may be a good substitute and add nutmeg? or blue cheese crumbles? also pureed it.
I went with this recipe due to all the reviews. I would say the soup was good but I don’t think we will be making it again. We tried to spruce it up because it’s on the bland side. We added some garlic salt, green onions and a little bacon on top. It wasn’t bad just not wow.

I was busy cooking a few things when i was making this- so forgot to remove bay leaf, and thyme sprigs until I’d whizzed it all up!!
When i read through recipe again it doesn’t actually mention removing them? Iam assuming though you should?

I was just going to ask the same thing!! I ended up taking out the bay leaf and caught one of the thyme sprigs, but blended the rest.

Do you think this could start out with bacon like you did for your butternut squash recipe??
I wanted a bit more protein in this, so I added ground beef and used beef broth for half the stock. It was truly excellent. This will definitely be added into my soup rotation!
I found this soup to be bland so I added 1 Tbsp lemon juice, 1 tsp butter and 1/4 tsp ground nutmeg. Much better.
So delicious!!! My hubby had some dental work done and I made this recipe afterwards, serving it to him lukewarm because he wasn’t supposed to eat anything too hot. I ate it warmer, just after stirring in the heavy cream. We both went blissful with the explosion of flavor from the combination of roasted cauliflower and perfect pairing of ingredients!
I have to admit that I used 2 cups chicken bone broth with 3 parts veggie broth. I have been trying to slip collagen into his diet because of his bone loss in his jaw. Totally delicious. This is just the perfect recipe and so elegantly designed and explained by the chef who shared it with us on the web.

Loved this soup. Creamy and so tasty. Froze several portions (minus the cream) and it was fine and didn’t seem to spoil
the flavour. This is the second time I’ve made it and certainly won’t be the last!
This recipe is fantastic but I thought it needed some acid. I added 2 T cooking sherry, juice of 1/4 lemon, a tsp of honey and 1/8 t grated nutmeg. YUM!!

Absolutely delicious! I didn’t add the cream as I didn’t have any however it is so velvety and creamy without it. Love the roast garlic flavour coming through…

I found the flavour was bland, so before serving, I just kept adding enhancements until I liked it: 2 Tbls red wine vinegar, 2 teas. sugar, 1 teas. curry powder, more salt and pepper, substituted yogurt for some of the heavy cream. Delicious! Even my non-soup-loving partner went back for seconds.
I roasted everything until nice and toasted because my two year old grandson would be having some. I omitted the cream but it was very creamy without it. He loves it and so do I. Thanks for posting.

I made this for lunch today. It’s a cool rainy day and I thought soup would be the perfect thing for a warming lunch. It is delicious! The roast garlic is just best flavour. I left the cream out but topped with a little grated cheese – YUM! I will be adding this to my soup list, thank you for sharing.

You should put in an instruction to remove the bay leaf and thyme sprigs. Some people may not know to do that. Otherwise, excited to try this soup!
I made this soup last night with very few changes. I used chicken broth cause it’s what I had, and I sprinkled some sharp cheddar shreds on at the end. It was fantastic. My husband said it was the best soup I’ve ever made and I make a lot of soup. Thank you for sharing your recipe. For the people who say it lacked flavor, my guess is they didn’t roast the cauliflower long enough or hot enough so they didn’t get the nice browned/roasted flavor which is the best part.

would coconut milk be a good choice to use in this recipe? Instead of cream.
I made this soup according to the directions. I used Imagine Organic Vegetable Broth but it was low sodium which was likely my error. Anyway, my head of cauliflower was huge and there are only 2 of us so I tried to cut the recipe in half. Because the head of cauliflower was large, it did not work so I had to add more vegetable broth at the end. I would not make this again. It lacked flavor even though I added salt and pepper at the end. The color was sort of a caramel color which was not appetizing. I had hoped it would be more “white” looking. I was disappointed. This was my first attempt at a cauliflower soup. I need the salt amount to be more specific I guess and the color of the broth is important.

Just made this and omitted the cream. It didn’t need it – was thick and delicious without it. I did top it with some grated cheddar just before serving, mostly to add a little color.

I HATE to do this, but I’m reviewing with a few changes because this was a spur-of-the-moment dinner decision when I remembered that the two heads of cauliflower in my fridge were pushing one week old and needed to be used ASAP. I did not have a head of garlic, so I roasted the cauliflower with salt & pepper, and added 1t of jarred garlic when I added the cauliflower to the liquid in step 6. I didn’t have any veggie stock, so I used 4C of chicken broth. I had no fresh thyme so I used 1/2t of dried. I had no heavy cream on hand, so I used half-and-half. In spite of all of that, this turned out DAMN DELICIOUS and is an absolute keeper!
I made this last night and it was delicious! I think my cauliflower was bigger than yours because it ended up super thick and I had to add quite a bit more liquid.
I roasted the cauliflower and garlic a couple days ahead because I had the oven going anyway and then just put it all together last night. I used chicken broth instead of vegetable stock because it’s what I had.

Your soup looks fantastic! I am curious about what brand of vegetable stock you use. My daughter’s vegetarian and soup should be an easy dinner to share but yet I find that I don’t care for any of the vegetable stocks that I’ve tried.

Wow, I love this soup, especially with our temps for today is a -3, with a hightest 10. Low teens for tge next week ad a half. Night temps single digits. Coooooool! Perfect time for warm soups. Thanks.
Can be made without cream by simply blending til smooth 1 cup of raw cashews with 1 of the cups of veggie broth. Treat it like cream because it is as delicious for any soup.

Sounds delicious, but would use cashew milk instead of heavy cream to make heart healthy, and more garlic for spreading on baguettes to go with soup. Sounds delicious, will definitely make soon!
