This copycat tastes just like the restaurant version except you can make it in the pressure cooker. It is unbelievably easy and effortless – anyone can make it! It is basically fool-proof. Promise!
Greetings from South Korea!
We have a quick layover here in Seoul before we finally head home to Los Angeles.
It’s been an amazing two weeks in Thailand but I am very much ready to get back home to our 56 degree F weather.
When the scarves, Uggs and seat warmers come out.
And this IP Olive Garden copycat recipe.
It’s truly one of my favorite winter soups ever.
And it’s even more of a favorite now that I know I can make it in the Instant Pot.
It’s rich, it’s hearty, and it’s full of kale!
It’s a great way to sneak in those veggies for those picky eaters, or in my case, Ben.
I have never seen him eat so much kale.
He said, and I quote, ” The kale soaks up the flavors of the sausage so it just tastes like sausage.”

I don’t have an instapot. How can I make it.
Excellent soup. I didn’t have the sausage so I put in 16 ounce of chopped baby Bella mushrooms with a 1/2 to 1 teaspoon of smoked paprika. Kept everything else the same.
I’ve made this soup many times now. So easy and delicious. Tastes way better then Zuppa Toscana at Olive Garden.
I used my slicer to slice my potatoes really thin. But we love this soup! My son requested for his 20th birthday! Super yum and tastes JUST like Olive Garden! Thank you for sharing!
This is not only one of my go-to recipes of all time, it’s now many friends and family members’ as well. It’s just damn delicious- thank you!!
I highly recommend Hill’s hot Italian sausage if you can find it (it really doesn’t come out too spicy!) and I love adding fresh green beans at the same time as potatoes (cut spoon sized). Cut the kale up pretty small too so it’s easier to eat. Love love love love love this soup!!!
Love this soup! I am dairy free so I use Thai Kitchen coconut milk. I would love to find the recipe for the Italian sausage . I had it but lost it.
I think the kale is too bitter this way – it should be cooked down more. Kale tastes like a leather boot from the corpse of a cursed pirate if it’s not cooked down. Massaging also helps, but I’d say after the pressure cook bring it up to a simmer again and let the kale hang out in the sauna for awhile until it doesn’t taste like hate. When it’s cooked down it’s soooo yummy. Not sure if cooking it in the pressure cooker with the potatoes would work or if it would turn to mush.
I have often pressure cooked the kale with the other ingredients and my family likes it this way. It’s definitely soft at the end but not complete mush. Hope this helps!
So good!
Very good, have made several times and it’s always great. I use 3 to 4 cups of frozen diced potatoes and it is makes the recipe even easier. I like using hot Italian sausage or just adding a lot of red pepper flakes
Absolutely delicious no leftovers
Love it and so easy!
DEFINITELY DAMN DELICIOUS! I should have left a review earlier, because I make this all the time. It was the first thing I made in my Instant Pot and is still a recipe that I make regularly. I sometimes use spicy sausage for a little kick, and always use baby spinach instead of kale. I always use extra spinach, because you know, greens that taste like sausage! 🙂 When using mild Italian sausage, I most often throw in some crushed red pepper flakes which brings the taste and zip over the top! Sprinkle a little bitof parmesan cheese on the top and…MWAH! Chef’s kiss. It’s even better the next day, and the day after!
Husband likes this better than olive garden now
I make this all the time for wife and me. I use hot Italian sausage and spinach instead of kale. This is one of our favorites. Especially during our Wyoming winters!
Love it! Easy and delicious. I like to use hot Italian sausage for a bit of a kick.
This was so good. It just melted in my mouth. The potatoes was so tender. There was so much flavor will make again soon.
How do youprepare this soup if you do not own an Instant Pot???
Hello,
Use a pot. Saute the sausage medium to medium high (step 1). For step 2, reduce to medium. For step 4, medium/low stir in potatoes and simmer until tender 15 minutes+. Then follow the rest of the recipe as is.
Excellent! Whole family loved this recipe. Quick and easy option for a weeknight.
I’m pretty sure I’ve left a comment on this before, but it’s so good I wanted to leave another! This is in regular rotation in my house and everyone loves it. So simple and so delicious!
Definitely needs more seasoning.
I use half Italian sausage and half chorizo. This will fix your spice problem. And make the best version you ever had. Your welcome.
