Bacon Breakfast Pizza

Pizza for breakfast?
Um, yes. The answer is always yes to that question, right?
And with the help of Stella® Fresh Mozzarella Cheese, this breakfast pizza cannot be any more perfect.
With it’s milky flavor and soft, delicate texture, the cheese melts right into the crisp, golden brown garlicky pizza crust, accompanied with bacon and eggs.
Because what breakfast pizza is without bacon and eggs?
My team and I certainly had this for breakfast the morning we shot this (with a box of donut as we usually do), and we had tested 4 pizzas so we all took some home.
Breakfast for dinner also works, right?

Bacon Breakfast Pizza
Ingredients
- 8 bacon slices, cut into 1 1/2 inch pieces
- 1 ½ tablespoons cornmeal
- 1 13.8-ounce can refrigerated classic pizza crust
- 1 ½ tablespoons olive oil
- 2 cloves garlic, minced
- 1 8-ounce package Stella® Fresh Mozzarella Cheese, thinly sliced
- 3 green onions, thinly sliced
- 3 large eggs
- Kosher salt and freshly ground black pepper
- 2 tablespoons chopped fresh parsley leaves
- ¼ teaspoon crushed red pepper flakes
Instructions
- Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.
- Heat a large skillet over medium high heat. Add bacon and cook until just golden but not yet crispy, about 3-4 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.
- Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
- Brush dough with olive oil and garlic. Top with mozzarella, bacon and green onions, leaving 3 (3-inch rounds) for the eggs.
- Place into oven and bake until the edges begin to brown, about 10-12 minutes.
- Remove from oven. Add eggs, gently cracking the eggs throughout and keeping the yolk intact.
- Place into oven and bake until the egg whites have set and crust is golden brown, an additional 8-10 minutes.
- Serve immediately, garnished with parsley and red pepper flakes, if desired.

I made something similar not too long ago, but I actually used a bag of fresh shredded hashbrowns as my pizza crust. Gave it even more of a breakfast feel to it! 🙂

Hello Chungha! Happy Easter to you and your family! Our Grandson, who lives in CA is coming to visit us in SD. He has been learning how to cook and I think we would have fun baking this breakfast pizza together. My question is, can we use 6 eggs instead of 3?

Yes, absolutely! But I recommend using smaller eggs – medium size may be best to make sure it all fits on the pizza!

Yes, it should be okay but please be mindful of cooking time as the crust may get overcooked.
Looking to make this with premade crust to allow for a quicker cook time! Would I just add the ingredients and cook it for the final 8-10 minutes? Thanks!

Just wondering if you think this could work with scrambled eggs. It looks so yummy except for the eggs – we prefer scrambled. Thoughts?
I love the idea of having scrambled eggs on pizza, Paula! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
I’ve made a pizza similar to this and used scrambled eggs. Scramble them first, but leave them under cooked, as they will continue to cook in the oven.
