Save money and calories by prepping your own PB&J whole wheat snack boxes for the entire week! Only 315 calories!
Who doesn’t love a PB&J?
Am I right?
And this one is not just for the kids.
There is something so satisfying about a really great PB&J (especially this whole wheat skinny version!).
Peanut butter, as with a lot of other nut butters, contains good heart healthy fats and essential oils that keep our skin healthy and glowing.
Blueberries are super rich in antioxidants. They can also ward off heart disease as they contain potassium, folate, fiber, Vitamin C, and Vitamin B6.
Strawberries have much of the same benefits except they are super rich in Vitamin C and manganese.
Carrots and celery are rich in enzymes, vitamins and antioxidants.
As with most snack boxes, you can substitute with your favorite fruits/ingredients. I personally love adding raspberries and peaches to mine in the summer as well as grapes and kiwi!
So if I make a peanut butter and grape jelly sandwich, I will fill my snack boxes with red grapes to match.
I know, I’m super OCD!
Copycat Starbucks PB&J Bistro Box
Ingredients
- 6 slices whole wheat bread
- ¼ cup peanut butter, creamy or chunky
- ¼ cup jam
- 8 celery stalks, halved
- 2 cups baby carrots
- 2 cups strawberries
- 1 cup blueberries
Instructions
- Spread 2 tablespoons peanut butter over 1 slice of bread. Top with second slice of bread and spread 2 tablespoons jam. Layer with third slice of bread and cut into fourths. Repeat with remaining 3 bread slices.
- Place PB&J sandwiches, celery, carrots, strawberries and blueberries into meal prep containers.

Instead of raw carrots or other veggies like spinach, is it okay to roast or stir fry them before putting them in refrigerator? Or they will get spoiled?
What a great idea! But unfortunately, without having tried this myself, I cannot answer with certainty. But if you get a chance to try it, please let me know how it turns out! 🙂
This was such a tasty lunch! Very filling and healthy. I only made half the recipe at a time because I didn’t want the sandwiches to sit around for too long. I’m a stay at home mom, so I didn’t need 4 ready to go lunches. Big fan of your blog!

I love the Starbuck boxes but I hate paying almost $6 for some very cheap ingredients. I actually replicate the Egg box and the PBJ box with some frequency but I tend to go much closer to the real box contents: half sandwich, veggies and ranch dip, string cheese, and apple slices (rubbed with a lemon wedge). I wish I could find something similar to the flax bread thingy in the egg box. The closest I’ve come in a mini wheat bagel. Anyway, this is a long, boring comment to say I love the simple, easy recipes on your site. They are helping me get back to cooking after a long hiatus from the kitchen. So thank you!
there are morning rounds at costco that are very close to it!
I was also going to suggest the morning rounds! Our local grocery only sells the cranberry and apple ones though. Very delicious either way!
How many days does it last
As I am not an expert on food safety, I am not comfortable answering these questions. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.
Do you use all 4 quarters of sandwich in 1 pack or place 2 in one pack & 2 in other pack?
