Super skinny, super low carb zucchini noodles recipe! Made in less than 30 minutes! It’s so flavorful, you won’t even miss the pasta here!
Who’s ready for that summer diet?
Yeah, me neither. My wedding diet went out the window months ago so I probably won’t get around to that summer diet either.
But, I can definitely incorporate some zucchini noodles here instead of that carb-loaded pasta without compromising any kind of taste or flavor.
Really.
I mean, hello, it’s low-carb goodness! And we have garlicky, buttery zucchini noodles topped with the most perfect pan-seared lemon garlic shrimp.
So no, we’re not calling this diet food. It’s just super skinny and super buttery and super quick with the shortest ingredient list of all.
Garlic Butter Shrimp Zucchini Noodles
Ingredients
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced and divided
- 1 pound 3 medium-sized zucchini, spiralized*
- Kosher salt and freshly ground black pepper, to taste
- 1 shallot, minced
- 1 pound medium shrimp, peeled and deveined
- 2 teaspoons lemon zest
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Melt 1 tablespoon butter in a large skillet over medium heat. Add 2 cloves garlic and cook, stirring frequently, until fragrant, about 1 minute.
- Stir in zucchini noodles until just tender, about 2-3 minutes; season with salt and pepper, to taste. Set aside and keep warm.
- Melt the remaining 3 tablespoons butter in the skillet. Add remaining 2 cloves garlic and shallot, and cook, stirring frequently, until fragrant, about 2 minutes.
- Add shrimp; season with salt and pepper, to taste. Cook, stirring occasionally, until pink and cooked through, about 3-4 minutes. Stir in lemon zest and parsley.
- Serve immediately with zucchini noodles.

I am looking for low carb recipes, and this one caught my eye. I’ve never enjoyed zucchini before, so I was nervous that I wouldn’t like them. I was glad to be wrong! It was so flavorful and delicious!
As a single person with too much zucchini in the garden and too much shrimp in the freezer, I consider this recipe a real find. I could have used more zucchini as it really reduces in spiral form – will do that next time (didn’t bother to weigh it). Easy to make, easy to adjust according to personal taste, lo-cal enough to justify a lttle crusty Italian bread on the side. Will share with fellow gardeners!

I bought a spiral slicer really like fresh zucchini, but I’m left-handed and my spiral slicer is made to use right handed. Is there different kinds that you can use with either hand?
I’m left handed also I took a potatoe peeler and peeled zucchini in long strands it looked great and tasted delicious with shrimp
Made this dish for dinner tonight. We loved it so much that it will become a staple of our dinner recipes. Added a sprinkle of grated parm for the finishing touch. So simple and fast, can’t wait to serve it to friends. We made the zoodles the day before and let them dry out on paper towels during the day. Stored them in the fridge for tonight’s meal. Love it!
We love this dish! I had never made zucchini noodles before (don’t own a spiral slicer) but I found some frozen zucchini noodles at our local grocery store. I’d like to try fresh as the frozen were slightly soggy. We are also big fans of spice so I added about a 1 to 2 tsps of Old Bay seasoning to this and it was great!
This is absolutely delicious and is super quick to make. I only had calamari hoods – no shrimp, so cut that into squares & takes similar time to cook. No lemon zest either, so used same quantity of preserved lemon skin cut very small. Also added a little chilli powder. Very nice & would make again.

Really great, very quick and deliciousl, only had frozen zucchini spirals and it worked well. Didn’t have shallot and used a leek.
Beyond easy and so delicious!
I’ve made this recipe twice now. Once with the frozen zoodles, and again with the fresh ones after buying a spiralizer. Will definitely only use the fresh ones, less soggy. I did use frozen shrimp that I thawed, and it came out just fine. Will be keeping this in my cooking rotation since its so fast and easy, and tastes delicious!
