Did you know that April is National Grilled Cheese Month?! We’re coming to a close in April but I just had to share this grilled cheese with you in honor of this glorious, celebratory month. Yes, grilled cheese does in fact call for a celebration.

I’m usually so behind on food holidays (I think I might have skipped over Easter!) but I actually made two different kinds of grilled cheeses for this month’s issue of Wisconsin Cheese’s Grate. Pair. Share. Magazine. This waffle grilled cheese is my absolute favorite of the two, which is why I’m sharing it first! So let’s break down this sandwich.

You have a waffle bread base sandwiching brie and a homemade blueberry compote, which then gets grilled to cheesy, melted ooey-gooey goodness. And you can’t forget about that maple syrup drizzle either. I mean, seriously, is there anything better for breakfast? Although I’d have no problem gobbling this up for dinner with a side of applewood smoked bacon!

Brie and Blueberry Waffle Grilled Cheese

The perfect grilled cheese for breakfast!

Ingredients

  • 1 ½ cups blueberries
  • Zest of 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon sugar
  • 2 tablespoons unsalted butter
  • 8 waffles
  • 4 ounces Wisconsin Brie, thinly sliced

Instructions

  • In medium saucepan, combine blueberries, lemon zest, lemon juice and sugar. Bring to boil; reduce heat to low and simmer, stirring occasionally, until sauce has thickened, about 5 minutes.
  • Heat butter in grill pan over medium-high heat. Place 3-4 slices Brie on 4 waffles and top with generous scoop of prepared blueberry compote. Repeat with remaining waffles and top with remaining 4 waffles to make 4 sandwiches.
  • Place sandwiches in pan and grill, flipping once, until waffle is golden and cheese has melted, about 2-3 minutes per side.
