Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 cup salsa
  • 1 (4-ounce) can diced green chiles
  • 1 tablespoon taco seasoning
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 tablespoons chopped fresh cilantro leaves
  • Kosher salt and freshly ground black pepper, to taste
  • 1 head butter lettuce
  • 1/4 cup shredded cheddar cheese, optional
  • 1/4 cup reduced-fat sour cream, optional

Directions:

  1. Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
  2. Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste.
  3. To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style, garnished with cheese and sour cream, if desired.

This was forking delicious! We ate it with yellow saffron rice. The kids and husband ate on tortillas, while I ate it on romaine.

This has become one of my go to recipes. It is delicious! The only thing I changed was that I use ground chicken instead of turkey. My husband loves it and I feel good about making it.

  4. I’ve made this twice now and it’s a big hit! Super
Delicious!!  I used romaine lettuce to make them look more like tacos

  5. I know this was from years ago but do you think I could itnit with chicken breast? I’d shred it but I’m wondering if it would be strange. I have so much chicken breast I’m trying to use up with fun dinners for my kids.

  6. Do you think these would taste good if a substituted ground turkey for ground beef? that’s what i currently have at home and was curious if these would still work out.
    Thanks!

  7. These sound great, but I wish they were really low carb! For people on low carb diets corn and black beans are really high in carbohydrates

  8. Made these tonight for my very health conscious 15 year old and received rave reviews! Thank you for this recipe and making me a hero to my teen daughter!!

  11. Would I be able to substitute butter lettuce for like Romaine or Iceberg? I am not sure where I could find a head of butter lettuce.

  12. How many carbs per serving?

  16. Made this tonight, and it was so easy and good! I didn’t even feel like I was “eating healthy” because it still had all the flavors and texture of a standard taco. Such a simple idea, but it works wonderfully. Thank you!

  17. Chung-Ah, all your recipes look amazing! I’m so excited I found your site! I’m pinning lots of these and looking forward to cooking them for dinner!

  18. Perfect summer food when we are all trying to eat healthy! Great idea!! Love your pictures 🙂

  19. Oh my goodness, these look perfect! I love tacos, especially the filling, but not always the tortillas, so I often eat the centers with a fork and leave the tortilla on the plate. I love the idea of a lettuce wrap instead! Already pinned!

  20. Here is what I like about this besides being delicious and one pot—–the idea of using lettuce as the wrap. I live alone. Quick meal without having leftover taco shells to contend with. The count down is significantly low now for your vacation. Ole;

  21. I am crazy for lettuce wraps these days, and you can betcha I’ll be trying these!

  22. Healthy tacos? I’ll take five please!

  23. So delicious, just perfect for busy weeknights!

  24. I’ve been dying to make lettuce wraps for so long and I think I’m finally inspired to do it 🙂 I’ve never even thought about doing a non-Asian lettuce wrap, I’m sure it’s awesome.

  25. Love these wraps and your homemade seasoning looks so good!

  26. I love this so much! I’ve been looking for more high-protein lunch ideas. <3

  27. What are the seasonings on the plate above? The recipe only calls for taco seasoning, salt and pepper. The plate looks like it has ground red pepper, cumin, garlic, oregano?, crushed pepper flakes, salt, chili powder, and pepper. Is this a homemade version of taco seasoning? If it is would you please give us your version because I would love to try home made taco seasoning.

  28. These look perfect! I would have never thought of putting a taco in a lettuce cup 🙂

  29. Making these tonite! Going to be a warm evening here in Northern Calif and these
    will fit the bill!!

  30. This looks so good and healthy. I am going to lettuce wrap this instead of the Taco shell it to cut calories. Thanks for this recipe.

    • I thought I was in the Quinoa Black Bean Taco recipe when I made this comment. Sorry about that. Love this recipe and seeing this recipe gave me the idea for that recipe.

  31. I LOVE lettuce wraps, and am totally diggin’ this Southwestern, taco spin on them! Especially when it’s weeknight friendly! Pinned!

  32. Mmmm, I love one-pot wonders, and this looks fab! And it only make sense to have cheese when you opt for lettuce wraps! 😀 Compromise is key 😉 x

  33. I honestly can’t remember who’s image I pinned earlier today of a similar recipe and thought to myself, Chung-Ah should make these! And bam, YOU DID! Beautiful. I love taco lettuce wraps!

  34. I’m pretty sure I’d eat tacos at every meal if I could so this lightened up version is definitely much appreciated!

  35. What a great way to cut carbs and still get your taco fix! Yum!
