Slow Cooker Cheesy Bacon Ranch Potatoes
The easiest potatoes you can make right in the crockpot – perfectly tender, flavorful and cheesy!
Potatoes. Cheese. And bacon. With these 3, you can’t go wrong.
And when you can throw these in a slow cooker, well that’s a double win right there.
Now the hardest part about these is not the prep.
It’s the part where you have to hold yourself back before you eat every single perfectly-textured potato chunk smothered in cheesy goodness and crisp bacon bits.
And I really don’t even know how to classify this. It could be an appetizer, side dish, snack or an entree.
I actually had it as all of the above, and devoured every last potato. And don’t think that Jason and I weren’t fighting for that last bacon bit at the bottom of the plate!

Slow Cooker Cheesy Bacon Ranch Potatoes
Ingredients
- 6 slices bacon
- 3 pounds red potatoes, chopped
- 1 ½ cups shredded cheddar cheese, divided
- 1 tablespoon Ranch Seasoning and Salad Dressing Mix, or more, to taste
- 2 tablespoons chopped chives
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Spread bacon in a single layer onto the prepared baking sheet. Place into oven and bake until brown and crispy, about 12-14 minutes. Let cool before crumbling; set aside.
- Line a slow cooker with aluminum foil, leaving enough to overhang to wrap the potatoes on top, and coat with nonstick spray. Place a layer of potatoes evenly into the slow cooker. Top with cheese, Ranch Seasoning and bacon, repeating 2 more times and reserving 1/2 cup cheese.
- Cover potatoes with aluminum foil. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until potatoes are tender. Sprinkle with remaining 1/2 cup cheese. Cover and cook until melted, about 1-2 minutes.
- Serve immediately, garnished with chives.

These are so easy and delicious. I followed the recipe but used real bacon bits and cooked them a bit more in the microwave before using in the recipe. I didn’t have chives and they were still wonderful. The next time I might use a bit more ranch seasoning. I forgot to spray the foil with nonstick spray and it was fine. I made 3 1/2 pounds of baby potatoes cut up and it took about 4 hours on high to cook. Everyone enjoyed them and one guest asked for the recipe. It’s a keeper and will definitely be made again. Thank you!
I love this recipe because it can be modified so that there’s just enough flavor to seem decadent without adding extra fat. (We use less cheese and bacon). We have made these twice and they are fantastic. I have a large family so I’m cooking 5 pounds of potatoes in a 6-7 quart crock pot. They were done in about 4 hours the first time. We will see how they are today. Great recipe!

These potatoes just melt in your mouth with the cheese bacon and ranch dressing flavor add a burst of goodness added in. I wanted to cut down the cook time so I nuked the potatoes for 5 minutes and it cut off about an hour. DAM DELICIOUS says it all!

The only thing I would suggest for this recipe if your doing it in the crock pot is to cook the potatoes first because I made it in the crockpot and the cheese amd bacon cooked before the potatoes did and it ended up burning a little. It still turned out really really good though
I made this for work potluck and was asked several times for the recipe and why didn’t I bring two crockpots full of the potatoes. I actual put the ingredient’s in my crockpot before work and cooked it at work on high and it was ready for lunch:) I did use russet potatoes as that is what I had, and the giant bag of real bacon bits from Sam’s.

I fail to see why anyone would want to have aluminum laced potatoes. What is the reason for the aluminum? Most neurological disorders can be traced to an inordinate amount of aluminum deposits in the body which can easily be eliminated BEFORE they enter the body, not after. Wouldn’t this recipe be just as good in the crock pot alone?
I make something similar using left over baked potatoes. I cut them in chunks and brown in the frying pan. I then pour ranch dressing (the liquid one) in a narrow dish. You then add the potatoes, sprinkle with cheese and crumbled bacon. Pop into the oven until cheese melts. Do not stir when you add the potatoes, the ranch is the bottom layer

Hi there. I tried this recipe a while back and the potatoes never cooked. I had them on high for 5 hours, then tried cooking them for another 5 hours when they weren’t ready…those potatoes refused to cook! My crockpot isn’t broken. The potatoes didn’t cook through after 10 hours in the slow cooker? I can’t help but think maybe your crockpot is not functioning properly? Potatoes (even whole potatoes) should not take that long to cook.

This looks absolutely delicious. I’ve never used a slow cooker but I’m getting my first one soon. Just wondering why you can’t cook the bacon in the slow cooker as well? Wouldn’t it be a lot more convenient?
Yes, it certainly would be more convenient but slow cookers work by trapping heat and cooking food over a long period of time, and that just doesn’t work well with bacon.
Do you leave the skin on the potatoes? What size do you chop them?
You can choose to leave the skin on the potatoes – it’s up to you! I also recommend dicing them very small so that they cook through completely within the time frame listed in the recipe.
Oh lord help me. I don’t need this after the holidays… but dang, do I want it. Anything with ranch mix in it is an instant win for me. I might have to have a little party just so I have a reason to make this… and so I don’t eat all of it by myself!
I just found this recipe in one of my cook books “Crockpot Comfort Food Diet Cookbook”. They’re not identical, but pretty darn close. Funnily enough I followed your recipe and made some before I found the one in my cookbook. My fiance and I loved it!
I used this recipe for a Christmas dinner side, and since I had a few carrots on hand, I chopped them up and threw them in with the potatoes. I had a few slices of already cooked bacon on hand, so that helped cut down prep time. I realized that I didn’t have the 4 hours to prepare in the slow cooker, so put them into the microwave for a minute to warm them up, then followed the foiling directions. What a pretty side dish, though my husband wasn’t thrilled to see carrots in with his potatoes!!!
These were delicious! I would recommend using Red potatoes or Yukon gold. I used russets, which were good, but I think the consistency of the other two might be better. Used homemade ranch dressing mix. Next time, I will use nonstick spray on the foil. The recipe was a hit with some pretty discerning diners!

I want to make this for a pot luck lunch at work and I have a couple of questions:
1. Where does the typically added liquid to aid in cooking come from?
2. Does the foil not turn the potatoes a grey colour (happened to me before)?
Dawn, there is no added liquid here. I have also never had any issues with gray potatoes resulting from the foil.

I used a 3-qt slow cooker.
You might want to be more specific in your recipe according to weather or not you should acually cover the crock pot with the lid as well as wrapping the potatoes with the foil. I had to read through the comments to be sure for myself. Also the pictures are deceiving as well, as they only show the foil used as coverage.
Elizabeth, yes, a lid is needed. I honestly don’t think I have ever come across a slow cooker recipe that DID NOT require a lid! 🙂

I made these and cooked them for 6 hours on low. I should have cut the potatoes a bit smaller. I used russets and I used real bacon bits for the bacon. The potatoes could’ve cooked longer but I chalk that up to not cutting the potatoes small enough. That said, the plate was literally licked clean. This is a keeper recipe! I did not use the entire packet of dry ranch dressing, no onions (only b/c I didn’t have any) and they were scrumptious.

I was so excited about these potatoes, they looked sooo good. I don’t know what happened, but I ended up cooking them for close to 10 hours and a lot of the potatoes were still not fully cooked. Place them in the crock pot on low. More than 2 1/2 hours, they don’t taste as natural. Two hours and your guests will never know you prepared them in advance
I can’t believe that there are so much repetitive questions on these posts. I am questioning the foil use. Does it have to be sealed so there is no leakage? Just wondering if I even want to not use foil. I also have foil bags, but thinking steam escaping is better than getting watery.

Oopse, forgot the chives. No worry, I added onions. Anyway. I don’t get enough veggies so I added onions, mushrooms, zacchini. Made like a lasagna but with no noodles, sauce or ricota. I’ll let everyone know how it’s turned out!
Looks good! I wonder if you placed the cheese afterwards; which in my case would be a good mozzarella, I’m not too fan of american cheese, and then place the pot in the oven on broil HI so the cheese get kind of like on the lasagna, little crisp on top. Would work?

2 questions. do you put the lid on slow cooker if you have the tin covering it as well? Also, I am thinking about making a bunch of these ahead of time in half recipes. Would the time to cook be the same if I threw the tin pouch of potatoes in frozen and not thawed if it is a half batch?

I used a 3-qt round slow cooker.
I am doing a layered dinner with these. I put , onions , mushrooms and round steak pieces in the bottom of my crock pot lined with a liner for easy clean up. Added 1 cup water and two packets of brown gravy mix. Topped that with foil added this potato recipe and sealed the foil tight. Let’s hope it turns out , I will be working but my tribe will let me know for sure!

Recipe sounds and looks amazing, but even more amazing is your patience. I ran across this on Pinterest a few weeks ago and thought it looked interesting. I used my 7 qt oval slow cooker (cross-crossed the foil to make sure all was covered) wound up adding another half tablespoon of dry ranch dressing/seasoning mix. For those who wondered about adding chicken…yes, you can, you don’t have to precook it (unless you want to to be crispy on the outside, then you would want to at least brown it). I cut my red potatoes into 1/2 to 3/4 inch cubes and the chicken about 1 inch cubes. Didn’t have the chives (sad face) and had to add the bacon after cooking due to my schedule. But. At the 8 hour mark, it was cooked to perfection. Not too watery, no gray potatoes. Thank you sooo much for another winning dinner idea!

Unfortunately, I just don’t think the Ranch dressing is going to work here as it is really best to use the seasoning mix. If it is not available in your area, you can easily make it at home – there are many DIY recipes available online.
Actually the recipe I have uses the ranch dressing (liquid), not the seasoning. I have made it that way for years and have to give out the recipe every time I make it. It is so simple. I make a huge batch in my roaster for holidays with the family. For just a smaller batch in the crock pot I probably use half a bottle.

I use Mrs Dash since I have to watch the salt. There is plenty of salt in the cheddar cheese and bacon. For this I think the Garlic and herb blend will be yummy.

I made these potatoes for dinner tonight..after a few hours in the crock pot I checked them and thought they were dry, so I cut up some butter and added to the potatoes and that helped a little. Not my favorite potato recipe.

i used the green onions and it was delicious. I did boil the potatoes for about 15 min and then put them in the crock pot on high for an hour and then on low for 2 hours. Everyone loved them!

I cook in my crock pot all the time, and have found that crock pot liners are my best friend. Wondering if I can use one of them, instead of the foil? Has anyone else tried this way, or should I just stick with the foil, and not mess with perfection?
Unfortunately, I haven’t tried using a liner before so I can’t answer with certainty if this is a good way to go. Please use your best judgment if you decide to use a liner.

Back with another silly question! I’m prepping to stick this in my crockpot tomorrow morning BUT, wanted to confirm- does the Ranch Seasoning and Salad dressing mix come in one packet? I’ve never purchased this before and just did a google search. I’m only seeing results that this is mixed together and sold in one packet. I tried this for a potluck. Followed the recipe exactly, was praying that nothing would turn gray or that water would be at the bottom after reading all the comments. The one difference was that I stopped the cooking process 1 1/2 hours before the completed 8 hours due to transporting the dish to work and then plugged it back in and cooked again for an hour. Everyone enjoyed the dish. I will definitely try this again. Thank you for this dish.
This went into the slow cooker about 30 minutes ago. I went “letter of the law” with the recipe, if I like it (and I’m assuming I will, as there is nothing here I don’t like!) I’ll make it again, and substitute shredded cheddar-jack.

Hi! I tried this recipe out for Thanksgiving and followed the instructions, but I also found an issue with liquid/water from the potatoes. Are there any tricks or tips during prepping (pre boil or bake potatoes, etc) that you do to prevent this? I dried the potatoes well using paper towels before placing them in the crock pot, but ended up having to drain quite a bit of water out, and the potatoes came out dark and not as appetizing as your photos :(. Any suggestions?

Just wanted to a make a quick comment about the change in coloring of potatoes. Sometimes if you use aluminum knives the potatoes change. Also if you soak them in salt water while you are getting things ready they won’t turn grayish color.

Kelley, the recipe calls for 3 pounds potatoes so if you are using 5, you can roughly double everything else, or add it to taste. And no, the potatoes will not stick to the foil but if you are worried, you can always use nonstick spray such as Pam.

What if you don’t use the ranch dressing mix and make it with other spices like black pepper etc. Will it still cook the same but just taste different ? Or does the ranch make it cook

I have found other recipes using lipton onion soup mixes. I haven’t tried it.I am trying it today. I am severely allergic to msg all ranch dressings contain it.

LINDSEY, i made this last night WITHOUT the Ranch seasoning, because I DONT LIKE Ranch dressing at all. I used black pepper, salt, chicken, bacon, and cheese..it turned out PERFECT!!! Im a great cook, and i experiment a lot..and always add my own little twists if a recipe calls for something me or my kids dont like. So YES you can make this without the Ranch seasoning!!

I made these yesterday but cut a few corners: bacon bits from a jar and pre-shredded cheese. It did not turn out well. There was a TON of liquid in bottom when I got home that night and the cheese didn’t really melt and turn creamy. What do you think made all that liquid?
Libby, you made some substitutions which may have caused the liquid, like the bacon bits from the jar. It is always best to use to the ingredients listed in the recipe to obtain the best results possible.

No, the foil does not stick to the bottom of the slow cooker. And the purpose of the foil is to allow the potatoes to steam rather than turning to mush.

Yes, I was in need of confirmation as well. The pictures only show the foil covering the potatoes. I would assume you would replace the lid, but the recipe you suggest we keep referring to doesn’t specify. I thought maybe the foil, and the leaving off of the lid, was some new technique. Tara, you assummed correctly. The recipe states both to cover the potatoes with aluminum foil and to cover the slow cooker.
Cover potatoes with aluminum foil and cook on low heat for 7-8 hours or high heat for 3-4 hours. Sprinkle with remaining 1/2 cup cheese. Cover and cook until melted, about 1-2 minutes.
Do you have to use tinfoil? I don’t think it healthy to cook food in foil.
Dee, you can also use a slow cooker liner if you wish.
I will try this however the recipe is misleading with the “covered” issue. You state to cover after adding cheese for 1-2 minutes. You should update it more clearly. Thanks

I made these over the weekend and it did not come out like the pictures above. The potatoes were dark and the cheese that were layered ending up burning. Should have I cut the potatoes in larger chunks?
Oh no! That should not be happening. Did you follow the recipe exactly as written, lining the foil and leaving the slow cooker on as directed? I worry that you may have left it on high for 7-8 hrs, not low, causing everything to burn.

Tried this yesterday….after 6 hours in the slow cooker the potatoes were still hard….ended up putting them in the oven for a hour so they would be soft enough to eat…had good flavor when they were done…if I make them again I think I would cut the potatoes into smaller cubes so they will have a better chance of cooking all the way.
Oh no – I wonder if your potatoes were just too big! I would give them a good dicing next time. Hope that helps!
The recipe says 8 hrs on low. I think 2 more hrs. Prob. would’ve made a difference if they were cut in bite-sized pcs.?
Katerina, it really depends on the size of your potato pieces. The smaller they are, the faster they will cook through.

Hey..saw your recipe and put it in the crockpot straight away..decided not to waste the bacon fat..so put it on my potatoes with a little bit of cracked black pepper…added a bit of chives in each layer too and used 1/3 marble, 1/3 jalepeno cheddar and 1/3 parmesan..blended to equal the cup and a half…always like to put my own spin on recipes…looks yummy!

The cook time may have to be adjusted, and you can certainly make this in one batch depending on the size of crockpot that you have.
I know you asked this question quite awhile ago, but I’m wondering how much time needs to be adjusted. I’m going to a celebration of life and could really use a quick answer.
Doubling the time seems way too much, but I’m planning on cooking low temp. My crockpot goes up to 10 hours. I figured I’d check then. The only problem is if I cook that far in advance and they’re done at 10hrs, should I just let them sit on low heat or refrigerate and reheat?

I actually just saw recipe with the chicken breast in the oven. It called for 4 cut up in cubes with almost the same ingredients a little oil drizzle back at 350, until chicken and potatoes are done then add the extra cheese. Yummy

A stoneware baker (pampered chef) would work amazingly for an oven version of this, if you don’t have one you can try a casserole dish with a lid or a piece of foil to cover.
Ooooh, I totally have a deep covered baker, but no crock pot/slow cooker, so your suggestion to use stoneware is music to my ears, or is that my tummy?! Well, regardless, thx for the idea, and now just one more pesky question, any further suggestions on cook temps and times? 😀

I make these in my deep dish baker all the time without the chives in the microwave. I don’t bake it all together though as I toss the potatoes in the ranch powder and cook for 20-25 minutes depending on how many potatoes you have. I add the cheese and bacon when they are finished and put the lid back o for about 3 minutes to melt the cheese and you are good to go. My baker is well seasoned so I know longer need oil but when it was new I would put a couple pats of butter on the top of the diced potatoes as they “baked”.

Depending on the size of your cut potatoes, 30 – 45 minutes at 350. You can also make this in the microwave in 10 minutes, stir and add the cheese after 5 minutes.
Yes, you can make these without a crockpot. I have only made them on the stove, but we call them “party potatoes”. I just wash the skin real well and cut them into bite-size chunks, then boil in a large pot of salted water. Boil just until you can start to insert a fork (don’t over cook because you are going to also bake in oven or on a grill).
While boiling potatoes, prepare large sheet pan with cooking spray. Drain potatoes and place as a single layer on prepared pan, lightly salt and pepper and toss with Ranch salad dressing (not the powder). Cover with cheese and bacon and bake (400*) until done. Garnish with green onions and fresh diced tomatoes.

Leia: Slow cookers can be so inexpensive and are on sale a lot. A couple of sizes to choose from depending on whether you need it for one person or a meal for several people. Once you have one and use it – you will wonder how you ever got along without it.
Leia, yes, these can be made in the oven. 350 degrees for 45 to 60 minutes depending on the size of the potatoes. Any potatoes will work but some are better than others flavour wise and some are sturdier, e.g. russet versus yellow potatoes. I would add the cheese and chives after the potatoes are cooked and toss gently, then back in the oven uncovered to gently melt the cheese. I would also toss the potatoes in olive oil or other oil rather than cooking spray.
I make these all the time in the oven. I bake them from 45 min to an hour (depends on the potatoes) covered in foil at 400.
I make red potatoes on the BBQ grill and they cook in 35 minutes. I have just used diced/cubed red potatoes, garlic and butter, but this recipe should work nicely and be super quick on the BBQ. Just seal it all up in foil and pop on the grill. Gonna try this recipe this weekend -sounds yummy.
We make a similar recipe in the oven; cut the potatoes into smaller pieces. (Look on pinterest)
