Baked Green Bean Fries
Healthy, nutritious fries that you can eat guilt-free. And they’re baked to absolute crisp-perfection!
Christmas is fast-approaching, and if our Christmas feast is going to be anything like our Thanksgiving feast, I’m in need of some fat pants and a huge serving of these green bean fries.
Now I don’t know about you guys but being the pathological snacker that I am, these come in super handy, especially when you pile on that Ranch dipping sauce. After all, it all evens out since these are baked, saving you on a ton of calories!
Baked Green Bean Fries
Ingredients
- 1 cup Panko*
- ½ cup grated Parmesan cheese
- Pinch of cayenne pepper
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ pounds green beans, trimmed
- ½ cup all-purpose flour
- 2 large eggs, beaten
Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a large bowl, combine Panko, Parmesan and cayenne pepper; season with salt and pepper, to taste. Set aside.
- Working in batches, dredge green beans in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
- Place green beans in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp.
- Serve immediately.

If posible change panko for oatmeal
I made these tonight and we LOVED them! Even my husband who doesn’t like green beans. So thank you for a great recipe. Next time I’m definitely finely shredding my cheese- I did it to large and it didn’t adhere to the green bean as well as I’d hoped. Live and learn
THIS WAS AMAZING. I may reduce the parmesan next time as I feel like it didn’t adhere very well, but overall delicious. Guilt free snacking!!!!

For all the people wondering if you can use frozen green beans for this recipe, I just wanted to let you know that I made these with a bag of frozen cut green beans (not even the whole ones) and they came out great. My kids liked the fact that they were bite size. I steamed them in the microwave for about 4 minutes, then followed the rest of the recipe from there. The steam/moisture left on the green beans helped the flour coating stick very well. As a side note, I did leave out the cayenne pepper because I have small children who do not like spicy things. I tried to compensate by adding garlic powder, onion powder, salt and pepper to the flour, and even added some seasoned italian breadcrumbs to the panko/parmesan mixture. They were still kind of bland – next time I will make with the cayenne or some wasabi powder to see if that gives them a little more kick. Either way, my family did enjoy them dipped in ranch and blue cheese dressing. Thanks for the recipe!
Is it just me or did I miss a step? They look great !! But they taste like raw green beans. Should I have cooked them first ??? Ugh. Was super excited about these. They look appetizing but don’t taste that way. Gunna toss the whole batch
Nope – they should have cooked through completely in the 10-12 minutes of baking time. Maybe they just needed to be baked a little longer?

But I felt that perhaps the green beans were a little dry, so I wonder if you had a dipping sauce in mind to go with them. 🙂

I made these tonight for something different. I usually fry our garden green beans. My family did not care for these and they were a bit time consuming and messy to make. I do love your website and have made several recipes of yours and they were all delish!
I’m sorry that this recipe did not turn out the way you had imagined. I only post recipes that have been successfully tested in my own kitchen, and as you can see from the comments here, many of these readers have had great outcomes in the final dish as well. So I must ask – did you follow the recipe exactly as written without any substitutions?

If I could make one tiny suggestion. When looking for the green beans look for FRENCH green beans. I’ve tried this recipe with different types of green beans and the FRENCH is the best!! 🙂
My husband and I made these tonight and they were AMAZING! It is quite rare to find something that’s relatively healthy but tastes good, but this dish is both! Love it!
Could you use something other than panko bread crumbs that would be just as delicious? Like maybe crushing up salad croutons?
You can certainly try substituting crushed up salad croutons but without further recipe testing, I cannot speak for how much this will change the overall taste/texture of the dish. Using a substitution may also result in a mediocre outcome.
I’ve recently discovered the little bags of sugar snap pea crisps, what a great idea to use panko! Can’t wait to try.
Delish! I washed the green beans and they were still damp when I put them thru the flour, which helped it adhere. My 12 year old son handled the egg and pano dipping. He loves them! Just enough cayenne. Yummy and easy!
Instead of dipping in the egg I will replace egg with fat free ranch dressing as this is what I always do. I cannot bring myself to use eggs. It is one food that I will not eat…..even my meatloaf is egg free
There’s an idea. I have little ones and am a bit anxious about keeping a carton of eggs that I may have to clean up off the floor. Ugh!

Chungah, You are amazing, they look so delicious, one question: when you dredge the green beans into the flour, how do they stick the flour? Are they wet when you dredge them into the flour? I will buy the beans and must make it right, my son loves, loves, loves green beans so much. I want to make it successful and tasteful. thanks a million.
The flour will not be sticking to the green beans very well but you want to aim for a simple, quick coating.
I understand that adding a small amount of cornstarch to the flour works well for helping a coating adhere to food items. Worth a try?
You could try a light spray /coating of oil to help the flour to adhere, then proceed with the egg and panko dredging. Bring on the crunch!
