Shrimp Boil Foil Packets
Easy, make-ahead foil packets packed with shrimp, sausage, corn and potatoes. It’s a full meal with zero clean-up!
The traditional shrimp boil is converted to an easy peasy foil packet dinner option.
Packed with shrimp, andouille sausage, corn on the cob, and baby red potatoes, you have a full meal right in these packets, packed with so much flavor and just the right amount of heat. You also have a grill option or oven option. You can’t go wrong either way.
And the best part comes in two – there’s zero clean-up and you can also prep this ahead of time. Win and win.
Shrimp Boil Foil Packets
Ingredients
- 1 ½ pounds large shrimp, peeled and deveined
- 1 12.8-ounce package smoked andouille sausage, thinly sliced
- 2 ears corn, each cut crosswise into 4 pieces
- 1 pound baby red potatoes, halved
- 2 tablespoons olive oil
- 4 teaspoons cajun seasoning
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- Cut four sheets of foil, about 12-inches long. Divide shrimp, sausage, corn and potatoes into 4 equal portions and add to the center of each foil in a single layer.
- Fold up all 4 sides of each foil packet. Add olive oil, cajun seasoning, salt and pepper, to taste; gently toss to combine. Fold the sides of the foil over the shrimp, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 12-15 minutes.*
- Served immediately, garnished with parsley, if desired.

what side dish would go well with this shrimp dish
Instead of olive oil add a qtr stick of butter and canned sliced potatoes. Delicious!
This dish was very tasty however my shrimp were over cooked! How do you avoid that?

I’m wondering if I can make the packets in advance and then tote (in a cooler of course) to a picnic area? If the shrimp were thawed and patted dry, the packets would hold for a couple of hours during travel?
YES THEY DO! I prepared the packets and put them in the cooler. When we found the perfect picnic area, we fired up a small grill and I let them cook for about 25 minutes, turning every 5 minutes and giving them a bit of a shake. You’re right, wait for the aroma! Husband loved them. It was just the right amount of food for us. I will definitely be making these often for camping season!
Just tried this recipe and it turned out fabulous. I cut large red potatoes in small squares because I didn’t have the small ones on hand, and boiled till tender, frozen shrimp that I thawed, and frozen corn on cob. I used half the amount of cajun seasoning, because not everyone in my family likes to kick it up a notch, so I added smoked paprika and garlic powder. I put this in the oven and it had my taste buds singing. Everyone enjoyed it a lot. This will go great in my collection of recipes.
Really good! Hubby likes anything with shrimp or sausage so 2 thumbs way up! The only problem I had was the potatoes took a bit longer to cook. I think next time I’ll boil them to soften them up a bit? Not sure.. gonna have to experiment but definitely going to have it again

Amazing. Both my kids absolutely devoured their portions. Perfect amount of spice. Only thing I did different was I used a smoked farmers sausage instead because thats what I could get :D.
Wanting to try it. Question…. If I added scallops would they cook for the same amount of time? I’ll buy larger ones as the 12 to 15 minutes cooking time so they aren’t overcooked, but ideas?
I suggest making a separate foil pack for the scallops, as they don’t need as much time to cook and they can get rubbery if overcooked!

I’ve made this for a camp meal over hot coals…worked perfectly with a couple tweaks.: I used canned whole potatoes and brought the shrimp frozen in it’s vacuum packed package…cold water thawed the shrimp (15 min) as they were still frozen on day 2. Thanks for this easy & delicious recipe which is in our regular meal rotation!
This was such a fun quick meal and great for a crowd! We did our’s on the Grill and 15 minutes at 450 was perfect!
I did this foil packet recipe for our camping trip…fantastic (a except potatoes not done) so partner now asking it for 2nd trip.. I want to put foil packet together the night before with parboiled potatoes (preboiled or steamed 15 minutes because last time baby new red potatoes did not get done on grill). But I am wondering if instead of using fresh shrimp I use Walmart frozen shrimp, no shell, tail on, put it all together in foil night before, leave next am, grill that night at campsite . My only worry is that frozen shrimp has a chemical ( Tripolyphosphate, see NYT link* below) in it that if you do not do quick thaw it gets mushy overnight, So question is can I put foil packet all together night before, frozen shrimp, corn (pregrilled a few minutes, into quarters?), parboiled potatoes, will shrimp be OK next night and will it have absorbed seasoning? (foil packet will be sealed in plastic in a cooler with ice several hours) or will shrimp get mushy?

How far ahead of time can you make this before cooking?
I have made this several times and it’s fantastic every time! It was mentioned that you can prep ahead but no specifics. If you prep ahead, can you make the foil packets and refrigerate them until ready to cook?
Can I freeze the cooked packages
I used frozen raw shrimp, frozen corn on the cob , combined them with potatoes and sausage. Kept the packets in the freezer, and kept them on ice til I got to campground. Placed the frozen packets directly on coals for 45 – 50 minutes and it was perfect.
