Sausage, Potato and Green Bean Foil Packets
Sausage and veggies packed in easy foil packets. Perfect for camping or a quick dinner! Can be baked/grilled.
I have never been a fan of green beans. Like ever. I wouldn’t touch it with a 10-ft pole.
Except if you throw it in a foil packet with sausage, potatoes, mushrooms and cajun seasoning – you won’t know what hit me. Green beans instantly become my best friend.
I’m not sure what it is but green beans suddenly do not taste like green beans in these foil packets. They taste like gold. No joke. And your picky eaters might say the same.
Sausage, Potato and Green Bean Foil Packets
Ingredients
- 1 12.8- ounce package smoked andouille sausage, thinly sliced
- 1 pound baby red potatoes, quartered
- 1 pound green beans, trimmed
- 8 ounces cremini mushrooms, halved
- 1 onion, chopped
- 4 tablespoons unsalted butter, divided
- 4 teaspoons cajun seasoning, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- Cut four sheets of foil, about 12-inches long. Divide sausage, potatoes, green beans, mushrooms and onion into 4 equal portions and add to the center of each foil in a single layer.
- Fold up all 4 sides of each foil packet. Add butter, cajun seasoning, salt and pepper, to taste; gently toss to combine. Fold the sides of the foil over the sausage, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 12-15 minutes.*
- Served immediately, garnished with parsley, if desired.

Made this tonight….Deelish!! My mil can’t do spicy so I only used a couple shakes of Cajun spice, still yummy! Would definitely make again.

What can I substitute for the mushrooms? I am afraid nobody in my house will eat it when they see those?
You can actually omit as needed.
This is a great, easy recipe. If you use a light butter spread it’s only 6 Weight Watcher smart points. 11 points if you use real butter which is always better, but sometimes you gotta do what you gotta do. 🙁
The andouille sausage I found was raw– should I cook it first, or slice raw? I guess I originally thought it’d be like smoked kielbasa- but I actually found it near the raw Italian sausages…..
Andrea, the packaged andouille sausage should already be fully cooked but if yours is raw, it may be best to cook it first. But as always, please use your best judgment.

We loved it. I did mix the 4 servings separately before adding to the foil. I cooked it in the oven, and it took about 40 minutes for potatoes to be cooked. Will definitely make again. Thanks so much for your wonderful recipes!
This was very good! However….WAY too salty. The Cajun seasoning was SUPER salty. Also, in the oven, it took much longer than 18-20 minutes! It was closer to 45 for the potatoes to be cooked. I will definitely make this again, this time with less Cajun seasoning and more paprika.
Yes, we also had that experience – I used Creole seasoning with salt and pepper but now that we know we like it, I’ll prepare for our camping trip with fresh carrots, instead of frozen green beans. It took 40 minutes to cook so I think the carrots will be perfect! Thank you…

There’s actually no need to melt the butter – it will melt and spread on its own as it cooks through. Easy, right? 🙂

How long should I cook this if I’m dg it in the oven instead of grill?
This can be baked for 18-20 minutes at 425 degrees F.
I have tried cooking this in the oven for the allotted time, however the vegetables were not close to being done. Did I do something wrong?
Stef, this can really depend on a range of factors – the size/thickness of your ingredients as well as the temperature of your oven. If your oven is not regularly calibrated, chances are your oven’s temperature is not accurate. You may set it to 400 degrees, and it may tell you it’s at 400 degrees, but your oven might be off by just a little, maybe 10 degrees or maybe even as much as 100 degrees. I recommend investing in an oven thermometer to see what is really going on in your oven.
I’ve made this many times, and I’ve found it takes about 30 minutes consistently to cook thoroughly in an oven. And, yes, my oven’s temp is recently and properly calibrated.
Can this recipe be frozen before or after baking?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
This is so good! I make this recipe about twice a month. I use canned green beans (2 cans) and sauté the green beans in a little olive oil with fresh minced garlic (4 or 5 cloves – we love garlic). I then add the green beans with oil and garlic on top of the sliced onions (I use 2 onions), potatoes and smoked sausage and roast in a roasting pan at 425 degrees for 25 to 30 minutes, stirring a couple of times. I also omit the water and do not cover the pan. I tried this method and it seemed to steam the dish and we like ours browner and caramelized. Thanks Chungah for a very awesome dish.
Fresh green beans are very tasty, trim the ends then proceed. You will retain more nutrients when using fresh.
What if you have a vegetarian child? Can tofu be substituted?
You can omit the sausage.
I love tofurkey sausage! It comes in several flavors; I plan to use it for this recipe.
