Thai Salmon in Foil
The flavors are sealed right into a foil packet with no clean up! The salmon comes out so tender/juicy. Sure to be a family favorite!
It’s crazy.
I was never a fan of Thai food until 3 years ago.
Really.
I think it was the smell of fish sauce. I couldn’t stand to be near it.
I still can’t stand to be around it – except when it’s added to Thai-inspired dishes, the flavors are AH-MAZING.
Or can I say, the flavors are “lit”?
A few of my friends were discussing the definition of “lit” last night, and we came to the conclusion that it meant “crazy good”.
Is that right you guys?
Because after that, we were basically sending each other snaps, being in bed at 9:00PM, or dancing to Spice Girls in front of our dog and cat with the caption: Our Saturday night is lit.
So basically. what I’m trying to say here is this:
This salmon is legit lit. With no clean up.
Boom.
Thai Salmon in Foil
Ingredients
- ½ cup sweet chili sauce
- 2 tablespoons reduced sodium soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon freshly grated ginger
- Juice of 1 lime
- 1 teaspoon Sriracha, optional
- 2 pounds salmon
- ¼ cup peanuts, chopped
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Preheat oven to 375 degrees F. Line a baking sheet with foil.
- To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside.
- Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the chili sauce mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
- Place into oven and bake until cooked through, about 15-20 minutes.
- Serve immediately, garnished with peanuts and cilantro, if desired.

This is my go to salmon recipe! I’ve made it many times, both grilled and oven baked, and it always tastes damn delicious!
I made this today it was deelish… the indian in me addedd a dash of chilli powder … I also baked it a hit longer ..
Unbelievable – followed the recipe first time round but in my second attempt cut sweet chilli sauce by half, adding in the cilantro to the recipe AND marinated the salmon for 2hrs then baked. The latter of my attempts we preferred but you can be flexible with this recipe which is why it gets 5 stars from me.
This was an excellent recipe! The salmon I had definitely took longer than 15 to 20 minutes (I think because I used multiple layers of foil – one piece of foil could not seal the salmon filets). Also, I highly recommend serving the salmon with spoonfuls of the sauce that pools around the salmon. The sauce is SO GOOD. We ate this with roasted broccoli and it was one of my favorite dinners in recent memory. Thank you!

This recipes cook time is wrong. I used a pound of salmon for the same amount of time and it still wasn’t fully cooked. Salmon always seems to turn out best broiled
Stephen, sometimes an oven’s set temperature isn’t always equal to its actual temperature. I recommend utilizing an Leave-In Oven Thermometer for accuracy. Hope that helps!
I chose this recipe because it looked good in images but was disappointed to find that it doesn’t look anything like the picture. Your salmon looks like it was grilled while mine looks anemic and boiled. You must’ve broiled yours afterwards but did not say so in your recipe. It still tasted good but next I will bake or broil it.
Kristina, the recipe was cooked exactly as written. It was, however, topped with additional sauce and various garnishes for photographic purposes.
This was fabulous! I did not have sweet chili sauce but I did have chili garlic sauce, I added honey and chinese vinegar to make a sweet chili garlic sauce, followed the rest of the recipe – delish.. I also cooked the salmon only 10-12 minutes but we don’t like it too cooked. Again, delicious.. I served it with a quick stir fry using veggies left over in my produce drawer from the rest of the week – wonderful quick dinner and easy clean up as well – Marta – Sugar Land, TX.

I made this recipe last night and it was indeed damn delicious. This going in the permanent file. Easy guest dinner would be this, already cooked jasmine rice, and sunomono, Japanese cucumber shrimp salad. Your website is wonderful!!!!

I just made this tonight. Tasted just like the dish I get from my favorite Thai restaurant. I served it with a side of Jasmin rice and sautéed green beans with shallots. The whole family loved it, including my 3-year-old. Thank you!

This looks amazing but I wonder how to reduce that sodium figure? Even with low sodium soy sauce it’s incredibly high. Is it from the fish sauce or the chili sauce? Any suggestions on getting that down?
Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
Can I use frozen salmon?
I recommend letting it thaw prior to using.
