Peach Bacon Brie Grilled Cheese
Fresh peaches, peach preserves, crisp bacon and ooey gooey melted brie sandwiches made right in the waffle maker! SO EASY!
The person who invented the concept of grilled cheese is a known genius.
But the person who invented the concept of a bacon grilled cheese – well, that person clearly knew what he or she was doing.
And no, I wasn’t the one to invent the bacon grilled cheese. I wish I did. But no.
Hey, we can add other things in here though. Like fresh summer peach slices, peach preserves, and brie cheese.
Now you can use any cheese you fancy – mozzarella, gruyere, fontina, etc. But I like how the brie melts here to let everything else come together so smoothly.
No, wait.
That’s not true. I just really like brie with a drizzle of honey.
But I promise. This combination works! Plus, you get to use your waffle-maker for a mess-free grilled cheese. Win-win, guys.
Peach Bacon Brie Grilled Cheese
Ingredients
- 8 slices bacon
- ¼ cup peach preserves
- 2 peaches, thinly sliced
- 4 ounces Brie cheese, thinly sliced
- 4 tablespoons unsalted butter, at room temperature
- 8 slices whole wheat bread
- 1 tablespoon honey
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.
- With a butter knife, spread butter on one side of each slice of bread. Spread preserves on each of 4 bread slices with buttered side down. Divide peaches, brie and bacon evenly on all slices. Top with remaining slices, buttered side up.
- Place sandwiches in the waffle iron. Close gently and cook until golden brown and the cheese has just melted, about 3-4 minutes.
- Serve immediately, drizzled with honey, if desired.

Soooo good! Husband and I made this today just using a flat sandwich press as we don’t have a waffle iron. Such a great combination – was a hit with both of us and we will definitely be making again 🙂
