Reuben Grilled Cheese
A classic American sandwich! Corned beef, melted Swiss, sauerkraut, and Thousand Island dressing. So cheesy and just so darn easy!
I have never met a Reuben that I didn’t like.
Reuben sammie.
Reuben hot dog.
Reuben pizza.
Reuben casserole.
And now.
A Reuben grilled cheese.
Made in the waffle iron.
I mean, really, would you have it any other way?
Deli sliced corned beef, extra extra sauerkraut, Swiss cheese, and Thousand Island dressing on perfectly toasted rye bread.
Now this is the one we REALLY like.

Reuben Grilled Cheese
Ingredients
- 8 slices rye bread
- 1 cup sauerkraut, drained
- 1 pound thinly sliced corned beef
- 1 cup shredded Wisconsin Swiss cheese
- ¼ cup Thousand Island dressing
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Working in batches, place bread slices into the waffle iron. Top with sauerkraut, corned beef, Swiss, Thousand Island dressing and remaining bread slices.
- Close gently and cook until golden brown and crisp, about 3-4 minutes.
- Serve immediately.

Drooling over here! This looks SOOOOO good… I admit, I’m totally a sucker for rueben and for a waffle maker grilled cheese. Need one of these STAT!
These are 100% delicious & versatile! My husband does not care for corned beef or grilled cheese. I thought this was worth a try anyway. So, here’s the short version of how I made ours. I chopped up the corned beef, a little. I don’t have a waffle iron or panini press so I made a regular grilled cheese & smashed it down with a spatula. We like Rye bread so I used that instead. Also, I do not care for red meat so I used peppered turkey breast. Dear Lord, I don’t think anything could make these taste bad!! We all Loved them! Thank you for another Amazing recipe <3

I have had one of these Ruben sandwiches before and absolutely loved it. The ingredients in the sandwich are quite different to what many of us are use to but they all work so well together. You have done a very fantastic job.

Hi – Can you recommend a good waffle iron? I tried looking through older posts but couldn’t find it! I was thinking about getting a Panini press, but this seems like a better multipurpose tool.

it is just natural to butter one side of each slice of bread for a grilled cheese. is it for this one? can’t wait to make some with this chilly weather we are having. love you cook book.
It’s not needed with the help of the waffle iron but really, it’s up to you!
What happened to the rye bread?
The recipe calls for 8 slices rye bread.
Chungah, I have seen a number of recipes using the waffle iron. I don’t have a regular waffle iron, mine is a belgian waffle iron. Do you think it would still work for the recipes? Thanks
