A Reuben grilled cheese.

Made in the waffle iron.

I mean, really, would you have it any other way?

Deli sliced corned beef, extra extra sauerkraut, Swiss cheese, and Thousand Island dressing on perfectly toasted rye bread.

Now this is the one we REALLY like.

Reuben Grilled Cheese

A classic American sandwich! Corned beef, melted Swiss, sauerkraut, and Thousand Island dressing. So cheesy and just so darn easy!

Ingredients:

  • 8 slices rye bread
  • 1 cup sauerkraut, drained
  • 1 pound thinly sliced corned beef
  • 1 cup shredded Wisconsin Swiss cheese
  • 1/4 cup Thousand Island dressing

Directions:

  1. Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  2. Working in batches, place bread slices into the waffle iron. Top with sauerkraut, corned beef, Swiss, Thousand Island dressing and remaining bread slices.
  3. Close gently and cook until golden brown and crisp, about 3-4 minutes.
  4. Serve immediately.

  4. These are 100% delicious & versatile! My husband does not care for corned beef or grilled cheese. I thought this was worth a try anyway. So, here’s the short version of how I made ours. I chopped up the corned beef, a little. I don’t have a waffle iron or panini press so I made a regular grilled cheese & smashed it down with a spatula. We like Rye bread so I used that instead. Also, I do not care for red meat so I used peppered turkey breast. Dear Lord, I don’t think anything could make these taste bad!! We all Loved them! Thank you for another Amazing recipe <3

  7. I have had one of these Ruben sandwiches before and absolutely loved it. The ingredients in the sandwich are quite different to what many of us are use to but they all work so well together. You have done a very fantastic job.

  17. Chungah, I have seen a number of recipes using the waffle iron. I don’t have a regular waffle iron, mine is a belgian waffle iron. Do you think it would still work for the recipes? Thanks
